Salad "Herring under the fur coat" - recipe with apple and vegetables

One of the most favorite salads in Russia is the "Herring under the fur coat." Recipe with an apple is used much less often, but the presence of a slightly acidic ingredient gives the salad a special piquancy.

The history of "Fur coats"

The idea of making a similar salad belongs to merchant and owner of taverns Anastas Bogomilov.

It was 1918. Revolutionary Russia. In taverns men of different classes gathered and talked about vodka about politics, which quickly grew into disputes. They did not want to have a snack and very quickly got drunk. Disputes turned into fights, and Bogomilov each night was losing money. Well, how to calm the raging brawlers? First, it was necessary to make sure that they ate and did not get drunk so quickly. And this meant that you had to come up with a dish that they could not refuse.

And so the chef named Prokoptsev, who worked in one of Bogomilov's taverns, prepared an original "ideological" salad. It consisted of several components, symbolizing the most important concepts of the revolution: herring - the proletariat, potato - peasants, beets - Bolsheviks, sauce Provencal - revolutionary France. On the days of the new 1919, a "presentation" of a salad called "Herring under a fur coat" (a recipe with an apple and carrots was invented later) was held in the tavern. Bogomilov revealed to his visitors his plan and told about the recipe. Do not eat salad, which symbolizes the revolution, would mean disrespect for the realities of that time. In addition, the salad was truly divine.

Preparation of "Herring under the fur coat"

Required components :

  • One large herring.
  • 3 potatoes.
  • 2 large carrots.
  • 2 beets.
  • 1 red onion.
  • 2-3 sprigs of parsley and dill.
  • 1 tbsp. Spoon of vegetable oil.
  • 1 bag of sauce "Calvet" or any other mayonnaise.
  • Black pepper.
  • Salt.
  • 2 sweet and sour apples, of course, if you want to make a spicy salad "Herring under a fur coat" - a recipe with an apple.

How to cook?

  1. Everyone knows that beetroot is brewed for a very long time, but this process can be accelerated if you cook beets, and all the other vegetables in the microwave. To do this, vegetables need to be thoroughly washed and punctured in several places with a fork. Put in a glass deep container for the microwave, add the necessary amount of water (see instructions) and put in the oven. If you decide to cook all the vegetables in the same dish, then note that first potatoes are cooked, then carrots, and only then - beets themselves. However, you can boil vegetables in the usual way.
  2. After the cooked ingredients cool, remove them from the skin and separately rub on a large grater.
  3. Herring clear of bones and skin, cut into small pieces. Sprinkle with oil and pepper.
  4. The apple is cleaned of seeds, cores and peel, and also wipe on a grater.
  5. Cut the onions into cubes, chop the greens.
  6. On an oval dish, put a potato on an even layer. Salt and grease with mayonnaise.
  7. Top with herring. Then sprinkle onions and grease again with mayonnaise.
  8. On top of the herring, evenly lay a layer of carrots, sprinkled with herbs. This layer is also lubricated with sauce.
  9. The next layer is apple. It is also lubricated with mayonnaise.
  10. The latter is a beet layer. Sprinkle plenty of mayonnaise, covering the sides of the salad.

How to decorate a herring under a fur coat?

Of course, the easiest option for decorating the "Fur coats" is to give the salad a shape of a fish with fins and a tail. However, for the New Year's table, you can think of something original. For example, a very interesting decision is to decorate a salad in the form of Santa Claus or Snow Maiden. How to do it?

Firstly, with the help of a spatula we give the entire salad the shape of a frost coat. The lower part is wide and the upper part narrow.

Secondly, we form the head. We decorate it with a beetroot cap, and use a thick layer of mayonnaise as white fur and beard.

Thirdly, we do the same with a fur coat. Since the salad itself is red, we can only use the mayonnaise to identify its edges and sleeves.

Fourth, it remains to attach boots. If your salad is "Herring under a fur coat" (a recipe with an apple), then during cooking, peel of peeled apples, it is necessary to postpone. They can be useful for creating boots for Santa Claus.

Another option is to make a salad in the form of a Christmas tree, sprinkling it with plenty of parsley. Instead of toys and beads, use green peas and corn.
