Everyone knows that noodles can be made at home, but many housewives limit themselves to only premium flour, since they distrust the alternatives because of lack of information. In practice, it turns out that rye noodles are no less delicious than classic noodles, and it is quite easy to cook it at home.

Today rye flour is gaining popularity among the population, as there is a "boom" of a healthy lifestyle. It is now possible in practice to make sure that everything new is a well-forgotten old, because rye in Russia has been loved since time immemorial.

Compared with the usual wheat flour, this product contains more useful minerals and fiber. Although they are not much different in calorie content, the benefits of rye flour are all the more - it is recommended as an element of dietary nutrition and for the prevention of diseases of the gastrointestinal tract.

However, before preparing noodles or baking bread, it is worth familiarizing yourself with the practical characteristics of rye flour.

It is important to understand that it contains less gluten, which is both good and bad. The bad news is that such baking is worse baked. In some cases, it is strongly recommended to dilute such a flour with a small part of the wheat flour, so that the "dough" you have made is more bound together, whole. The dough from one rye product will turn out to be inelastic, and it will be more difficult to roll it out.

Not only in Russia

Rye, along with other cereals, also enjoys popularity in Japan. In its pure form it is rarely used, however it is very common. This is Japanese noodles made with rye flour. There are also buckwheat and combination variants.

Soba is already sold ready and dried in the form of thin strips, bound in "portioned" bundles. Naturally, it is darker than classical wheat. There is also a variety called cha-baa. It has a dark green color, as it is kneaded on green tea.

Japanese rye noodles in Russian practice

Soba can be an excellent alternative to such a harmful fast food - only 5-7 minutes are prepared, perfectly absorbs the tastes and flavors of the products that you add to it. For example, you can prepare an excellent dish in just a quarter of an hour of the following ingredients:

  • Japanese noodles from rye flour - 250 grams;
  • Chicken breast - 200 grams;
  • Vegetable oil - 3 tbsp. Spoons;
  • Bulgarian pepper - 1 piece;
  • Zucchini (in the extreme case a young zucchini) - 1 piece;
  • Onion green - 5 pcs .;
  • Onion - 1/2 pcs .;
  • Chili sauce - 250 ml.

Boil the noodles in boiling water for 5 minutes. Rinse with cold water, allow to drain.

Cut chicken, zucchini and peppers into thin strips, onions with half rings and green onions just smaller. Put a deep frying pan on medium heat, heat and add butter. Put the meat in the pan with vegetables, continuously stir until the chicken is ready, and the vegetables are not browned. Pour the sauce of chili and let it boil.

Spread noodles on plates, on top - chicken with vegetables. Serve immediately.

And how to cook noodles from rye flour at home? Very simple. It is enough to adhere to the following recipe:

  • Rye flour - 500 grams;
  • Eggs of chicken - 3 pieces;
  • Salt - 1/2 tsp;
  • Water 120 ml;
  • Flour rye on podsypku - how much will take the dough.

Sift flour with a slide on the work surface, make a small depression in it. In turn, drive in the eggs there and, adding water, begin to knead a steep dough. Knead the dough for about 10 minutes until it becomes firm and stops sticking to the surfaces. Important! Make sure that the mass is uniform. Put the dough back in a bowl, cover and let it rest for half an hour.

After that, divide the mass into three parts. Roll out each one very thinly. Leave the resulting layers in the open air for half an hour, so that the noodle dough is dried and hardened.

Now you can cut the noodles of the thickness that you need.

If you plan to serve it as a garnish, then boil in the same way as classic pasta, then season with butter.

Noodles can also be used in soups. For example, it will perfectly show itself in mushroom broth:

  • Saturated mushroom broth - 2 liters;
  • Boiled mushrooms - 300 grams;
  • Vegetable oil - 3 tbsp. Spoons;
  • Salt - to taste;
  • Pepper - to taste;
  • Noodles from rye flour - 1/3 of the portion from the recipe above;
  • Favorite greens - to taste.

Prepare noodles, boil it and set aside. Put the mushroom broth on medium heat. How to boil, add oil, salt and pepper. Finely chop the mushrooms, add to the broth along with the already prepared noodles. Stir.

Pour the finely chopped greens and remove from heat. Allow to brew for 5 minutes, and you can serve.

Rye noodles with seafood without hassle

For those who do not like to be content with semi-finished products and thus have neither the strength nor the desire to stand for hours at the stove after work, this recipe:

  • Dry noodles from buckwheat flour - 200 grams;
  • Shrimps peeled - 300 grams;
  • Processed cheese - 300 grams;
  • Water - 1 glass;
  • Soy sauce - 3 tbsp. Spoons;
  • Salt - to taste;
  • Pepper - to taste.

Cook the noodles until cooked, rinse and discard.

Put a deep frying pan on medium heat, put cheese, soy sauce and water in it. Stir the corolla until the whole sauce is gone. Add prawns to the sauce, cook for 3 more minutes.

The final step: rye noodles go to shrimp, mixed and served for joy to loved ones. If desired, shrimp can be replaced with chicken fillet.
