Recipe silk: ways to prepare Kazakh tortillas

Each nation, as a rule, has its own national cuisine with special dishes and different ways of preparing them. Any Kazakh woman knows the recipe silpek since childhood. These tortillas in each house are always in the main place.

National traditions

Kazakhs are very proud of their national culture. It's not just costumes, dances, or some rituals. They consider their national cuisine to be a real source of pride. Among a huge variety of dishes, a special place, of course, is bread. For Kazakhs, these are flat cakes with a rather unusual name. Recipe silk is familiar to all the housewives from the very childhood. They are cooked on weekdays and holidays. Famous oriental cakes meet guests and see off friends on a long journey. You can cook such bread on water, milk or kefir. The simplest recipe of shelpek includes three main components: 3 teaspoons of flour will need a teaspoon of salt and a glass of water.

Cooking cakes is not difficult:

  1. First, all the products must be joined together and kneaded from them sufficiently thick dough.
  2. Using a knife, the semifinished product is divided into several parts.
  3. Each piece roll out a rolling pin in a pancake 2-3 mm thick.
  4. Frying pan to put on the fire and warm it vegetable oil.
  5. Now the blanks need to be alternately put in boiling fat and fry for 3 seconds on each side. For a better roast cake you need to move the fork in a frying pan, rotating them in a circle.

Finished products will only be folded on a napkin to leave on it excess fat, and then carry to the table.

Complex composition

If dairy products are used instead of water, then the taste of cakes will be more pronounced. Take, for example, a recipe called silk on milk. To do this, you need: for 400 grams of flour a glass of milk, 5 grams of salt and baking soda, a tablespoon of granulated sugar, 400 milliliters of vegetable oil and a teaspoon of table vinegar.

The preparation process goes through the following steps:

  1. Preheated milk is mixed with sugar, salt and three tablespoons of vegetable oil.
  2. Add the same soda, slaked vinegar.
  3. Gradually adding flour, gently knead the dough. Then cover it with a towel and leave for 15-20 minutes.
  4. From the finished test, tear off a piece and roll it into a cake with a thickness of 1-2 millimeters.
  5. Residue the oil in a frying pan and fry in it silk. Lush cakes are cooked deep-fried. They must directly float in the fat.

Before serving on the table, you can wrap any filling to taste. It can be specially cooked meat or a mixture of vegetables.

Different opinions

Some believe that the dough for shelpek must necessarily be dense and thick. But this is not true. There are different options for its preparation, from which you can get a great silk in Kazakh. The recipe, which uses yeast, is very similar to another flour dish of local cuisine called baursaki. The composition of the components is taken practically the same: for a glass of milk - 5 glasses of flour, 25 grams of pressed yeast, 2 tablespoons of sour cream and melted butter, 10 grams of sugar, half a cup of water and a couple of glasses of vegetable oil.

In this case, the process will proceed as follows:

  1. To prepare the dough, you first need to heat the water and dissolve salt in it with sugar.
  2. Yeast diluted in milk. To make them work faster, you can add a little sugar.
  3. Enter the ghee, and then combine the solutions.
  4. Add the flour in portions, knead the dough. Cover it with a lid or cloth and leave for about an hour for proofing.
  5. Now the usual way to divide the dough into pieces, roll each of them into a thin layer, and then fry in boiling oil.

Cooked in this way shlpeki are more delicate and fragrant.

Pellets on kefir

If in the house, for example, there is no milk, then the recipe for shelvelk cakes can be slightly corrected. In this case, the set of products will change slightly. For baking, you will need: per kilogram of flour - a liter of kefir, 50 grams of sugar, a pinch of salt, half a teaspoon of soda and 150 grams of sour cream.

Cooking method:

  1. First, in a separate vessel, it is necessary to mix kefir, soda and sour cream.
  2. Then, gradually adding flour and other ingredients in small portions, knead a soft, plastic dough.
  3. Now the mass must be divided into 2 parts, each of which is rolled into a bundle.
  4. The test billets are cut into the same pieces and sprinkled with flour.
  5. The resulting semi-finished products rolled out with a rolling pin in flat cakes, and then alternately fry them in oil on both sides.

Finished shelves carefully using two forks to remove from the frying pan and stacked on a plate. Extra oil can be removed if you place paper napkins between them. A little later they should be thrown away.
