Pork knuckle in the oven: a recipe for a delicious dish

The baked Veprevo knee is a crown dish of the Czech Republic. The original recipe for its preparation has long been national and is offered in all institutions of the country. At the same time, it resembles the usual preparation of pork knuckle in the oven, which is so fond of baking in Ukraine and in Russia.

Ingredients

For preparation you will need:

  • Pork knuckle - 1 piece;
  • Beer - 2 liters;
  • Garlic - 4 cloves;
  • Pepper fragrant - 15 peas;
  • Black pepper - 10 peas;
  • ginger root;
  • Bay leaf;
  • Apples sour - 2 pieces;
  • Honey - 100 g;
  • salt;
  • nutmeg;
  • Soy sauce - 50 ml;
  • coriander;
  • parsley;
  • celery.

Meat preparation

Pork knuckle in the oven, the recipe of which involves baking in Czech, is chosen so that the knee itself was in the middle. Thanks to this, it will turn out juicy and with large pieces of meat. The stick is first processed on an open fire to get rid of the remains of the bristles. Then it is thoroughly washed and scraped with a knife. After that, small cuts are made on the meat, into which pieces of garlic are placed. Ideally, they should be 25 pieces. Then rub the rubbed mixture of peppers and salt. It is in this form it must be marinated.

Pickling

In order for the pork knuckle in the oven (the recipe for the baked vepreva knee) turned out juicy, it is marinated in beer. To do this, put a large pot of greens, half a nutmeg, pepper peas and a little bay leaf. On top, add the ginger root, sliced into small pieces. Next, put the wheel and fill it with one liter of beer. Then they all are salted and covered with sliced apples (without peel and seeds). After that, the remaining beer is poured, since it is with it that the pork knuckle in the oven is good. Recipe for this dish involves pickling the product in this form throughout the day. After this time, the meat is cooked in the marinade for about an hour, although many cooks prefer to stand it for another four hours, without resorting to cooking or any other treatment.

Baking

After the dish is extracted from the marinade, it is spread with a mixture of honey and a portion of soy sauce. Then wrap everything in foil and cook the pork loin in the oven for two hours at a furnace temperature of 180-200 degrees. Ten minutes before the ready, the meat is unwrapped and baked for another ten minutes to form an appetizing crust.

Innings

To the table, a pork knuckle in the oven (a recipe for the baked vepreva knee) is served along with the beer. It is desirable to use its dark varieties. As a garnish all kinds of vegetables are served, but in an ideal variant this dish is combined with stewed cabbage. It is in this form it is served in the Czech Republic in the most expensive and popular establishments.
