Pancakes from the liver

Prepare liver pancakes is not difficult. They are eaten on their own or filled with stuffing and rolled into rolls, and even on their basis you can make a liver pie.

Preparation of the liver

Take a fresh liver and soak it for an hour and a half in milk at a rate of 1L. Milk per 1 kg. Liver. In the milk, if desired, add 1 tsp. Salt. Soaking is necessary in order to stretch the bitterness, make the liver soft and tender. If you have only fat milk at hand, dilute it with boiled cold water, roughly 1/1.

Test preparation

Beat the eggs and add them to the liver powder. Salt, if you like spicy dishes - pepper, add half a cup of milk and mix thoroughly. Now enter 200 gr. Sifted flour and knead the dough, it should look like dense sour cream.

Further, by introducing small portions of milk, dilute the dough to a more liquid state, so that it flows in a trickle. Pancakes from the liver can be from 0,3 to 0,8 mm thick, if more, they will be difficult to bake, when turned over they will break and become stubborn for screwing the filling.

Baking

Bake pancakes from the liver should be done in the usual way. Pancake frying pan, lightly oil and pour pancakes with a large ladle.

The first side is fried until the top of the pancake all cooked, there should be no stains of raw dough. The second side fry 15-25 seconds, until you get a light blush.

Remove the pancake with melted butter or grease the entire circumference of the filling and wrap it in a roll.

Filling

Vegetables for the filling are fried in butter, all separately. Onion can be crumbled finely or rings. Carrots rub on a large grater or cut with thin straws. Eggs and rice boil. Eggs finely chopped.

Mushrooms boil, then fry in cream margarine or oil.

You can use other vegetables, if you think they are compatible with the liver. Pancakes made from liver are very nutritious, if they are stuffed with meat stuffing.

With what to submit

To eat liver pancakes, the recipe of which was given above can be both cold and hot. Stuffed pancakes can be cut into cubes 2-3 cm and served as a cold snack to the festive table. As an ornament and to brighten the dish, chop the finely greens and sprinkle them with rolls. Put them on the leaves of fresh watercress lettuce or Peking cabbage, which can well be used and as components of the filling.

They will perfectly match with butter or sour cream. As this is a salted dish, it is quite appropriate to serve them with any kind of sauce, including mayonnaise or ketchup. The most elementary version of the sauce is the addition of garlic to mayonnaise or sour cream.

From liver pancakes you can make a puff cake. To do this, pancakes should be transferred among themselves with meat or any other stuffing, grease on top with an egg, lightly beaten with a fork, sprinkle with grated cheese of sharp or salty variety and bake in the oven for 12-15 minutes.

Without baking, you can make a pie if you do not add the filling, just grease each pancake with mayonnaise flavored with garlic, stacked on top of each other with a pile. Allow to stand in the refrigerator for about an hour and serve to the table.
