Kids often show an interest in an adult table, but not every dish is suitable for a special children's menu. There is a way out - prepare young guests bright sushi vegetarian!

Beauty in simplicity

The Japanese know how to make real masterpieces from the simplest products. No wonder one of the most popular in the Land of the Rising Sun species of land are modest poppies. Tasting them, you can enjoy the original taste of the main ingredient, without being distracted by the details.

Vegetarian sushi fits perfectly into this concept. But from vegetables not only poppies, but also many other varieties are prepared, which include a large number of components. They are not only tasty, but also very beautiful thanks to pieces of bright vegetables. A carefully designed vegetarian sushi set looks like a magical kaleidoscope.

Vegetarian toppings for sushi

Many Japanese cuisine is associated with fish and seafood. But believe me, there is a huge variety of vegetarian recipes for sushi and rolls. For them, the following ingredients are most commonly used:

  • Young vegetables (tomatoes, cucumbers, bell peppers, carrots, beets, beans);
  • Exotic products (avocados, olives, bamboo shoots, asparagus);
  • Greens (lettuce, watercress, shnit-onion);
  • Mushrooms;
  • Cheese (creamy, curd, tofu);
  • Mayonnaise, common and soy;
  • Fuczosa, scrambled eggs;
  • Auxiliary products (nori, rice paper, sesame, flaxseed).

Not all eat eggs and milk cheeses. If you are cooking sushi for vegetarian guests, it is advisable to clarify this point in advance in order not to get into a mess.

Of course, this is not a complete list. You can experiment by adding your own components.

Cooking rice

As with ordinary, vegetarian sushi is better prepared from special rice. It is grown in the Far East and treated in a special way. It's just perfect for cooking Japanese food.

To easily create products, it's worth a little tinkering with the preparation of rice. Rinse 400 grams of cereal in running water, load into boiling water. The water needs exactly 2.5 times more, that is, a liter. Boil rice without a lid, stirring constantly. In no case do not let the groats be digested.

Leave the rice, let it cool. Many cooks use the ready-made Sushidze refueling. You can prepare the sauce yourself, but you need to do this beforehand. To do this, mix 2 tbsp. L. Pink rice vinegar, 0.5 tbsp. L. Sugar and 1 tbsp. L. Salt. Allow the mixture to stand for several hours, and then pour into the cooled rice.

Many vegetarians prefer to skip this step, considering sugar as a harmful product. Do as you please. Well-cooked rice and without refueling is well shaped.

Different kinds of rolls

For those who are confused in the terminology, let us recall what the unusual Japanese names mean:

  • Poppies are rolls with one main component. They can consist, for example, of nori, rice and avocado.
  • Futomaks include several ingredients. The vegetarian version can consist of cucumber, cheese and shnit-onion, wrapped in a rice coat and a nori sheet.
  • Uromaki is the rolls inside out. In the nori, the filling turns, and only then the roll is wrapped in the rice layer.
  • For preparing spring rolls, use not dried seaweed, but rice paper. Rice in them, as a rule, do not add, often replacing it with fucoze or glass noodles.

Of course, this is not all varieties. Japanese cuisine is truly a huge variety. But for those who have just started to comprehend the basics, listed is enough. All these options can be prepared without meat and fish products.

Recipe roll with cheese, avocado and cucumber

Consider an example of cooking vegetarian sushi. Peel two medium cucumbers from the skin and cut along. Avocado cut in half, remove the bone, using a tablespoon free the pulp from the peel. If the fruit is ripe, the flesh can be crushed with a fork, turning into a gruel. Cheese for a specified number of products and 400 grams of rice will need 200 grams (Philadelphia is best suited). To make the rolls more juicy, you can use a small amount of Japanese mayonnaise.

Spread the bamboo mat, lay the nori sheet on it. Tightly pound the rice onto it, distributing it evenly over the entire surface. On the edge lay the stuffing: cheese, avocado, cucumber. Tightly roll the roll, turning the mat.

Cut the roll into pieces with a very sharp knife.

Spring Rolls

Having mastered the previous recipe for vegetarian sushi, you can try something more unusual. We need the following:

  • Rice paper - 9 sheets;
  • Rice noodles - 175 g;
  • Carrots - one average;
  • Onion green - half-baked;
  • Bamboo shoots - handful (optional);
  • Shiitake mushrooms -25 g.

If desired, you can add a few drops of soy sauce and lemon juice.

First of all, steal rice noodles. Carrots grate on a Korean grater, add the rest of the ingredients to it. Cut the noodles into slices (centimeters by 7) and mix with the rest of the ingredients. Spread a sheet of rice paper, lay 1.5 tbsp. L. Stuffing, tightly wrap. When all the rolls are ready, fry them in a large amount of butter and immediately serve to the table. Although in a cooled form they are also delicious.

Feed to the table

Vegetarian sushi is served in the same way as usual, and also eat with bamboo sticks. It is advisable to start the meal with a small amount of pickled ginger - it will include taste buds. Soy sauce will help reveal all flavors and tastes, and wasabi will add piquancy.
