How to cook a cake with fish from a yeast dough

Since ancient times in Russia, housewives bake pies with a variety of fillings. But a special niche among them is pies with fish. The preparation of such a dish is a masterpiece of the art of cooking. It is necessary that the cake was not only delicious, but also juicy.

And in order for your dish to turn out just like that, you need to know that the fish likes onions and butter. Only this wonderful duo will help to bake a real cake with fish from a yeast dough.

For a simple filling, you can, of course, take a canned fish, but a real pie will only be stuffed with fresh fish. Fish choose with a minimum number of bones and preferably fatter. For a pie, a fillet of sea bass, an ordinary capelin or halibut, is what you like best.

Cake with fish from yeast dough

Let's start with the test. Dough for pie with fish you can take the usual, yeast, for the preparation of which you will need:

- 1 teaspoon dried yeast powder,

- 2 tablespoons of sugar (table),

- 1 spoon of salt (can be sea, chopped), tea,

- 500 ml of water is warm,

- 250 g of vegetable oil,

- flour.

We knead the dough, and the meal must enter exactly that much. To get a tight, but well-rolled elastic test. We give him time to rise (an hour and a half). Then once again we mix and divide into two parts.

For the filling, the fish are cleaned and released from the ridge, tail and head. Slightly salted.

One part of the test is for the bottom of the cake. Carefully lubricate the pan with oil and put the rolled dough on it. We spread the prepared fish from above and cut the butter (cream) into pieces.

The next layer is onion, cut into large rings. Here I want to note that the masters of culinary art believe that onions in a pie should be no less than a fish. This will make it more juicy and give tenderness.

Now roll out the second piece of dough and cover our cake, combining it with the bottom piece of dough and tearing the edges.

Beat the egg and lubricate with the help of a silicone brush the top of the pie. Do not forget to pierce it in several places. One hole can be made in the middle, from which excess air will escape.

Heat the oven (180 degrees) and place the pan with the cake inside. The baking time is thirty (forty) minutes.

After your pie with fish from the yeast dough is ready, quickly lubricate it with butter (cream) and wrap in a towel, letting the dough go soft.

Another kind of pies is rastegai.

Rastegai with fish are no less tasty than traditional pie. We suggest to try rastegai with pike and salmon.

We will need:

- two glasses of wheat flour, sifted,

- 3 spoons of oil (vegetable), canteens,

- 30 g of yeast,

- 300 g fish fillets (salmon and pike),

- 3 pcs. Eggs,

- black pepper, breadcrumbs, salt.

In pre-warmed milk, brew yeast, gradually adding flour. Prepare the dough and leave it for lifting.

Then add to it two yolks, vegetable oil. We knead the dough well and leave it for lifting again.

While the dough rises for the second time, pike the fillets finely chop, pepper, salt and fry in a pan.

From the risen dough we roll out a thin layer and squeeze out medium-sized mugs from it. We put on the middle of each billet minced pike, from above we put a piece of salmon and carefully patch the edges, leaving the middle open.

On the pre-greased baking tray, we put the rastegs and leave for fifteen minutes to allow the dough to disintegrate.

After that, we grease everything with egg (pre-whipped) and sprinkle with breadcrumbs.

Pies are baked in an oven, preheated to 220 degrees.

Ready-made open pies perfectly fit to the ear, meat broth.

A cake with fish from a yeast dough is a great dish, but it takes a long time to cook it. And if the guests are on the doorstep? In this case, instead of the yeast dough, you can use sand or puff, purchased in the store. Fresh fish can be replaced with canned (in oil).

Filling for pies with fish is very much, you can combine

- fish and rice,

- fish, eggs and rice,

- fish, rice and sauerkraut.
