Ingredients:

  1. Cod fresh, fillet - 800 gr;
  2. White fruity wine - 1 glass;
  3. Cheese noble solid - 100 g;
  4. Marinated olives - 130 g;
  5. Basil violet - 8 branches;
  6. Sour cream or fat cream - 500 g;
  7. Dill - 100 g;
  8. Onion-turnip - 3 large and strong bulbs;
  9. Sea salt, white pepper, French mustard.

You can prepare the cod in the following way:

1. Thaw the fish and wash. With a sharp and long knife, cut the dorsal and ventral fins, remove the insides, head and tail. Carefully cut the ridge without cutting the carcass in half. From the outer and inner sides, inset it and rub the cod with salt.

2. Prepare marinade from wine, French mustard, salt, four sprigs of basil and pepper. Brine does not need to be heated. In it for thirty minutes to put the fish.

For example, marinade from white wine can be successfully replaced with an equally original and fragrant composition. In the pan, pour two cups of purified water through a carbon filter , and then boil. Peppercorns, bay leaves, three tablespoons of sugar and two fine iodized salts, as well as white mustard seeds, are poured into the water . Before the end of cooking in the marinade dip the crushed garlic cloves and chopped into small sticks of horseradish.
