At each stage it is necessary to observe the conditions, the violation of which can lead to the fact that the wine will turn out to be tasteless and without a peculiar watermelon flavor. So, let's look at the basic subtleties of how to make wine from watermelon according to all the rules.

  1. Purification of watermelon and separation of pulp. At this stage, it is important to completely separate the pulp from the crust, excluding the ingress of white parts into it, which, when fermented, can add bitterness to wine. Grains that have got into the pulp and not removed from it, when pressing and squeezing the juice can also significantly change the taste of the ready-made drink.
  2. Cleaned flesh is desirable to squeeze out as quickly as possible, since it is easily oxidized by exposure to air. The windmill has a lower flavor and a less intense flavor.

  • 2.5 g of tartaric acid;
  • 10 g of tannic acid.

All the ingredients must be combined and stirred until the sugar is completely dissolved, then place the mixture in a tightly sealed container, which is put in a dark cool (but not cold) place. Literally during the first two days, rapid fermentation begins, the appearance of which can be determined by hissing inside the container. To open wine during the ongoing process is not worth it, since this can delay its readiness.

After the hissing ends, you can open the container with a ready-made drink and, filtering it, pour on clean bottles. After the end of fermentation, you can add another 0.5 kg of sugar to the finished wine from watermelon.

To prepare watermelon liqueur for every 10 liters of juice, 12 kg of sugar is needed. Half of the latter must be mixed with the wort before fermentation, and the remainder - closer to its end. For better mixing of sugar with a drink, it is better to prepare the syrup, dissolving it in hot water in the ratio 2: 1. Wine yeast will require about 20 g for every 10 liters of the prepared beverage. They can be replaced with 40 g of wine and 15 g of tannic acid.
