Gas appliances for shawarma: advice on choice and manufacturer feedback

Shaurma, as a fast food dish, is very popular not only in the seaside resort towns. It has gained popularity everywhere, where you can have a snack inexpensively and practically on the go, without spending time sitting in a cafe. In any city on busy streets, especially in student areas, you can find outlets where shawarma is cooked.

What is Shaurma?

Shaurma (shaverma) is a dish known in the Middle East, which is eaten by hands. In the Arabian cake as a filling put small pieces of fried meat and fresh vegetables, which are seasoned with sauces and various spices. Used in this case lamb, beef or poultry.

In the domestic spaces shawarma is made from chicken or pork, grated cheese, onions, carrots and other fresh or canned vegetables (seasonally and fantastically the seller) with the addition of tomato sauce or mayonnaise in a thin Armenian lavash. Lavash is a very thin fresh flat cake made from wheat flour. It is soft, so it is very convenient to wrap the stuffing in it.

There is shaurma and vegetarian, in which the main ingredient is not meat, but fried potatoes.

For roasting meat is used to prepare a shawarma. It is very interesting to observe how the seller cuts thin pieces of meat with a sharp knife and immediately wraps it up with a vegetable salad in a flat cake - in the full sense "with heat, with heat."

Apparatus for the production of Shawarma

Specially designed for grilling meat grill is a vertically placed skewer, on which the thinly cut slices of meat cut. This skewer rotates around its axis near the flameless heating element, the meat is roasted from the outer edge, and its thin roasted layer is constantly cut into the tray.

In general, the apparatus for preparing shawarma is a stainless steel cabinet, heating elements, reflectors, a pallet, into which fat is collected, and removable skewers with fixatives.

The main difference is the heat source for the heaters.

Gas appliances for shawarma are most often found on the streets in mobile outlets. For them, there is no need to connect to electrical networks, that is, they operate autonomously - the gas is supplied from a cylinder.

The electric shawarm is most often installed in stationary pavilions, when there is no problem connecting to the network. Infrared radiation, which form a special tubular heater, allows for a much higher temperature to cook meat much faster.

Advantages of gas appliances

Gas appliances for shawarma are equipped with a cylinder with liquefied gas, that is, significantly cheaper fuel than electricity. In addition, gas appliances are much faster heated than electric. Such a device can be ready to work in a matter of minutes.

There are models completely autonomous, in which only gas is used to maintain the fire in the burners. As a rule, they are cheap, but they are able to work with 10 kg of meat on a skewer that rotates mechanically, and the seller can follow the uniform frying and crusting on meat.

Rotating the knife allows the meat to be fried evenly, but the intensity of the burner ensures the speed of cooking. One of the advantages of a gas appliance is the ability to easily adjust the intensity of the burner, as in a home gas cooker, by turning the gas cock.

Disadvantages of gas appliances

Gas appliances for shawarma fry meat more slowly.

If the design of the device has an electric drive to rotate the skewer, it will still have to be connected to the electrical network. In addition, the gas in the cylinders has a very unpleasant feature - it ends at the most inopportune moment, and therefore it is desirable to always have a spare cylinder and carefully monitor the fuel consumption.

Attention requires and shut-off valves on the cylinder, and pipes that feed gas to the burners.

The tightness of joints and the absence of mechanical damages protect against possible gas leakage. The flame of the burner can be extinguished for various reasons, but most modern models of gas equipment are equipped with a gas control system, which in this case blocks the gas supply, and its leakage does not occur.

The main disadvantage of using gas is explosion and fire hazard. Because of this, gas appliances are banned for use in many large cities.

The main technical characteristics of gas appliances

The main indicator for choosing gas appliances for shawarma is the load, that is, the maximum amount of meat that can be strung on one skewer.

As a rule, the apparatus is equipped with one skewer, but there are devices with two skewers. Such devices allow simultaneously fry different kinds of meat, increasing the assortment of offered products, which is important for the active work of the outlet.

Devices differ and the method of rotation of the trochanter. The electric drive is convenient because it does not attract the attention of the seller during cooking, and the mechanical spit is controlled by the cooking process.

The convenience of maintenance and cleaning are very important in the preparation of any food, including shawarma, especially in mobile street spots. Therefore, the hull material is a very important characteristic of the apparatus. Food stainless steel and glass ceramics, in addition to being resistant to corrosion and mechanical damage, can easily be cleaned of contaminants.

The devices of different design have different overall dimensions. The dimensions of the device are very important for small stalls with a limited work place.
