Sour milk, which is often called yogurt, is an excellent basis for the dough. The products formed from it can be baked in the oven, fried in a pan, baked in a multivark. The dough made of sour milk turns tender and airy, and it can also be stored in the refrigerator for several days. Freezing in the freezer is possible and formed products, for example, vareniki. Every housewife probably has favorite recipes for a wonderful sour-milk dough, which always turns out and gives an excellent result. Several dishes from it we will consider.

Dough for thin pancakes

Perhaps, one of the most famous dishes of Russian cuisine in the world is pancakes. Of what they just do not cook! The basis for the test is taken and mineral water, and a yeast opara, and milk, and even beer. No wonder they say that there are so many housewives, as many ways of preparing pancakes. The basis of this dish is dough made from sour milk. Recipes for pancakes are not much different from each other. As a rule, the same ingredients are used: curdled milk, soda, eggs, sugar, flour. To make pancakes more flavorful, you can add a little vanilla, cinnamon, cocoa or fruit essence to the dough. Approximate proportions of products:

  • A glass of yoghourt;
  • 1-2 raw eggs;
  • 2 tbsp. L. Sunflower oil;
  • 6 tbsp. L. Flour;
  • Half a glass of warm water.

In the water that has been diluted with water, add soda and let it brew until fine bubbles form. Put the rest of the ingredients, knead it. Frying pan with oil, warming and fry thin pancakes. If the oil is added directly to the dough, further lubrication of the frying pan is not required, pancakes will not stick.

Cooking lush pancakes

Another no less popular dish that is served with jam, jam, honey, sour cream, chocolate cream, berry syrup, condensed milk. The dough for pancakes from sour milk turns out to be very gentle and airy. Cooked on this recipe pancakes are perfectly stored for a couple of days and do not dry. But this, of course, only if they do not end immediately. So, prepare the dough:

  • Half a liter of curdled milk;
  • 2 tbsp. L. Sahara;
  • egg;
  • Half a teaspoon of soda;
  • salt;
  • 3 cups of flour.

Razirayem egg with sugar, add sour milk, salt. Pour soda and mix thoroughly. And now we will add flour in small portions, smashing the arising lumps with a fork. The dough should be thick, then the pancakes will rise well. Fry in hot oil, spreading with a spoon. This dough made of sour milk is suitable not only for sweet pancakes. You can prepare and salty snack, laying in the middle of each pancake mixed with onions raw ground meat.

Air pies with aromatic filling

For cooking fried pies, the same dough of sour milk, as well as on pancakes, with the only amendment - flour should be more suitable. It must be added until the dough turns into a lump that is easily molded by hands.

As a filling you can use fruit and berry jam, meat, offal, potatoes, rice, eggs with greens. Wonderfully suitable for a recipe for pies with sweet or hot-salted curd.

Pie and even cake

And who said that dough made from sour milk is suitable only for everyday cuisine? This is completely wrong! From curdled milk you can cook wonderful pies and even cakes. For example, there is such a recipe for a test for pies from sour milk:

  • Yogurt - 1 item;
  • Sugar - 1 item;
  • Egg - 1 piece;
  • Flour - 1,5 items;
  • Soda, slaked with vinegar, - 0.5 tbsp. L.

Unlike most of the recipes of the test on a sour milk base, it is recommended to quench the soda with vinegar, and not simply to bring in an already acidic medium. The rest of the ingredients you just need to mix.

And now the most interesting. This recipe is just the basis for our future baking. It is combined with a huge number of fillings, which are added directly into the dough before baking. Thanks to this, you can cook quite different desserts at least every day. The recipe can be supplemented with fresh berries, sliced fruits, raisins, nuts, chunks of chocolate, dried bananas, dried apricots, cottage cheese. And if you add half a glass of cocoa and a handful of prunes, and the resulting cake cut in half and smear with custard, you will get a delicious chocolate cake, which is quite suitable even for a holiday. Its exquisite taste can be emphasized with cocoa glaze and sprinkled with roasted walnuts.

Crispy chebureks

Many of us just love this Tatar dish. But not all buy it at public catering points. And why? After all, you can cook wonderful chebureki yourself. Few know how to make dough from sour milk for this dish, and do not risk contacting such a recipe. And completely in vain! After all, there is nothing complicated in it.

To make a dough, you need a glass of curdled milk, one egg and wheat flour. Liquid ingredients should be simply mixed and gradually added to them flour until the dough becomes tight. Roll out cakes better with a rolling pin.

There is another way. To sour milk-egg base is added 1 tbsp. L. Flour, boiled water. And only after that, the rest of the required amount of flour is added to the dough from sour milk and eggs. Cooked in this way, the chebureks are blistered when roasting. Minced meat does not flow from them, but the dough remains crispy for a very long time.

Gentle cookies

Dough made of sour milk is perfect for making sweet pastries. It produces a very tasty and beautiful biscuit. The process of preparing it is so simple that even children will be happy to participate in it.

So, we will prepare such ingredients:

  • 1.5 cups of yoghourt;
  • 900 g of flour;
  • A glass of sugar;
  • 200-gram pack of butter;
  • 2 eggs;
  • Incomplete teaspoon of soda;
  • a pinch of salt.

Softened butter mop with an incomplete glass of sugar, drive eggs. Pour in sour milk, stir well, add soda. After that, start to pour in the flour. How much it will be required depends on many factors. The dough should roll well and do not stick to the hands. With the help of a glass we form products. Cookies can be sprinkled with the remaining sugar. Bake in a preheated oven for about 10 minutes.
