Dough for pies - simple recipes, great result!

Patties - a dish that we have known since childhood, what delicious and fragrant they were from our grandmothers and moms! Now, going to the store, you can see a huge number of different pastries, but cooked at home pies not only seem tastier and more fragrant. They leave in the apartment a unique smell, which casts a lot of memories and envelops the house with a kind of warmth and comfort.

Having decided to please home baking, you need to correctly choose the recipe for pastry. After all, they can be from yeast or shortbread dough, puff pastry, etc. The most suitable for baking in the oven will be yeast and dough cooked on kefir.

Yeast dough for patties (unpaired method)

Ingredients: a glass of water or milk, flour (3,5 - 4,5 items), yeast (30 g), one egg, butter (4 tablespoons), half a glass of sugar, salt.

Preparation. Milk or water slightly warmed, dissolve yeast (the resulting mixture should be homogeneous). Beat the eggs (they should be at room temperature) and pour into the diluted yeast, put the sugar there (if the pies are with savory stuffing, the amount of sugar should be increased), salt, add flour in small portions and knead the dough. When all is well kneaded, add pre-melted butter. Mix until a homogeneous, soft, elastic mass that does not stick to hands. Ready dough should be put in a bowl, lightly sprinkled with flour and sent to a warm place to go. When it rises (to increase in volume by a factor of 2), it should be re-kneaded again and put back into heat. After the dough is suitable for the second time - you can start to make patties.

Yeast dough for pies (opaque method).

Ingredients: 2 glasses of milk, half a kilogram of flour (maybe slightly more), yeast (50 g), 5 eggs, 100 g butter, vegetable and margarine, one and a half glasses of sugar, salt.

Preparation. This dough is prepared for pies in two sets: first the opara is made, then the dough is kneaded on its basis.

Let's start preparing the spit. To do this, heat the milk a little, dissolve the yeast in it, put a tablespoon of sugar and sift about a glass of flour (so much flour that the dough has a consistency of liquid sour cream). We introduce the flour gradually, constantly stirring. After stirring the dough to a homogeneous consistency, we sprinkle a little on it with flour, cover it with a towel and put it in a warm place. By the time this process will take about an hour and a half.

In a separate bowl, whisk eggs with sugar and salt. We melt on slow fire oil and margarine. We take a bowl of spelled and add whipped eggs with sugar, gradually introduce the remaining flour, mix well. We pour melted butter with margarine into the dough. We spread it on a table covered with flour and carefully knead it (about 20 minutes). We set the kneaded homogeneous, elastic dough back in a bowl, cover it with a towel and send it to a warm place for several hours. The dough is ready.

Dough for pies on kefir

Ingredients: a glass of kefir, half a glass of vegetable oil, a spoonful of sugar (you can slightly more), salt, packing dry (11 g) yeast, three glasses of flour.

Preparation. Pour kefir and vegetable oil into a saucepan, warm slightly, put sugar and salt. Mix thoroughly. In a separate bowl, sift the flour and mix it with a batch of yeast. Gradually pour this mixture into kefir with butter and knead the dough. If dry yeast is not, you can use the usual - fresh. They must be diluted in warm kefir with vegetable oil. Or take a few spoons of warm water to add a pinch of sugar and in this mixture dilute 40 g of yeast, then leave them for 15-20 minutes. From all the ingredients knead the dough, leave it in a warm place for half an hour to come. The dough is ready - you can add the filling.

The dough for patties in the oven according to this recipe is soft and prepares much faster than the yeast, and the finished pies do not stale for a long time and have a magnificent aroma.
