Each of us in some form did not try cabbage: cooked, baked, fried, and sour, and pickled. In the latter case, it retains the maximum of its useful properties, since it does not undergo a strong heat treatment during cooking. The first recipe of pickled cabbage

We need such products: two kilograms of white cabbage, beets, one glass of vinegar (9%), a liter of water, salt (two spoons), a glass of sugar sand, half a glass of sunflower oil, red bitter pepper (one) and garlic head. Cooking process

We send part of the beet to the cabbage and start making layers of these products, not forgetting to put garlic and laurel leaves between them. When our capacity is full, vegetables need to be compacted so that they lie tightly in the jar. The next stage is brine. To produce it, we boil two liters of water in a saucepan, salt it, add sugar sand, black pepper with peas and cloves. Five minutes let them leave, then pour in the vinegar and literally cook for a couple of minutes, carefully making sure that the marinade does not boil. We fill it with cabbage, we wait for cooling and we send it to the refrigerator. After about 24 hours, cabbage (slices) with beetroot is ready. You can get it out of the cold and serve it on the table.

How to cook a large amount of pickled cabbage

Sometimes it becomes necessary to quickly cook a large amount of cabbage. For this you can use a quite common recipe. We need: three and a half kilograms of white cabbage, 200 grams of beets, two heads of garlic, 200 grams of carrots, 200 ml of 9% vinegar, 100 ml of vegetable oil, 170 grams of sugar and five teaspoons of salt. We offer you a method of making cabbage with beets of fast cooking and in large quantities. Get a lot of snacks, but believe me, it will not last long. We cut cabbage with three-centimeter squares, sugar beet - thin slices, garlic is simply cleaned, and carrots are three on a large grater. We take a large pan and lay it in layers: cabbage, carrots with beets and garlic, again cabbage and so on. In total, four or five layers are obtained. On top should be our main product.

After filling the pan, proceed to the marinade. Mix sugar, 9% vinegar, vegetable oil and salt in a separate container, pour boiling water (about one liter) and mix well. We fill the cabbage with this brine and put pressure on it. An hour after two marinades will cover our snack, and in three days it will be ready. We transfer it to the jars and send it to the refrigerator.
