Its main ingredients are: red or green hot pepper, salt, spices, garlic, horseradish and even walnuts. We offer several ways of cooking seasonings.

Acid adzhika without cooking

This classic recipe for red acute adzhika is known from the earliest times. Ingredients:

  • Capsicum in the amount of 500 g;
  • Seeds of coriander (otherwise - coriander) - 15 g;
  • Basil (fresh or dried) - 10 g;
  • Dill (dried or fresh) in an amount of 10 g;
  • Savory in the amount of 10 g;
  • 7-8 garlic lobules;
  • Nuts and salt.

Technology of preparation

Adjika without cooking is ideal for giving a special, piquant taste to dishes from vegetables, meat or fish. To obtain the sauce, it is sufficient to mix all of these components. Garlic and pepper before it are ground in any way. Nuts knead to small crumbs, and fresh herbs are cut with a knife. Salt is added to taste. This recipe is classic and does not include tomatoes in its composition.

Burning Adzhika for the winter without cooking

A very spicy seasoning, prepared according to the following recipe, is very hot. Its composition:

  • Green pepper or pepper in the amount of 1 kg;
  • Peeled garlic - 500 g;
  • Large salt in the amount of ¾ of a faceted glass;
  • Half a glass of different seasonings (for example, dill, hops-suneli, coriander).

Technology of preparation

Pepper should be prepared only with rubber gloves, otherwise you may get burns. Cut the pods, remove the stems. Chop the peppers in any way. Peel the garlic and rub to the gruel. Mix the ingredients. Put salt and seasonings. This adzhika without cooking is very acute, its use is not recommended for people with abnormalities of the stomach. If desired, you can slightly soften the flavor of the seasoning. Instead of a kilogram of hot pepper, take 800 grams of sweet and 200 grams of spicy.

Adjika from a tomato without cooking

To make a seasoning with tomatoes you will need:

  • Ripe tomatoes in the amount of 3 kg;
  • Sweet pepper in the amount of 1 kg;
  • Garlic - 500 g;
  • Hot pepper in the amount of 150 g;
  • Half a glass of salt;
  • 3 tablespoons of sugar.

Technology of preparation

Adjika without cooking or "cold" adzhika is very easy. All vegetables should be washed and cleaned (remove seeds, stems, etc.). Using a meat grinder (blender) you need to grind the ingredients. Fall asleep salt and sugar. Mix. Leave for 24 hours in a cool place. Then drain excess liquid (if any) and pack it in containers or jars. Store in the cold.

Adjika without cooking: a recipe with apples

To prepare Adzhika you need:

  • Ripe tomatoes in the amount of 5 kg;
  • Bulgarian pepper in the amount of 1 kg;
  • Apples (preferably acid and solid varieties) - 1 kg;
  • Carrots in the amount of 500 g;
  • Pickled garlic - 500 g;
  • Pepper spicy - the amount is determined according to taste (the more you love, the more you add);
  • Salt and sugar.

Technology of preparation

Wash vegetables and apples, polish. Grate the carrots. All other ingredients are ground using a meat grinder. Mix, add salt and sugar. Let it brew during the night, then pack it in containers and place in a cold place.
