Adjika for the winter.

Adzhika - seasoning, which came to us from the Caucasus, but already firmly rooted in our traditional menu. With the beginning of harvesting, the hostesses begin to harvest it for the winter, so that in the cold season they can enjoy delicious and healthy vegetables. Adjika for winter can be harvested in both cooked and raw. The crude adzhika, of course, will require storage at lower temperatures, but all components that make up it will retain more useful substances. Here are the most popular recipes of this harvest for the winter.

Adjika with horseradish

Ingredients: sweet and bitter pepper (5 pcs each), tomatoes (600 grams), parsley and dill (a small bunch), wine vinegar (1 glass), grated horseradish (several table spoons), garlic (1 head) , Sugar and salt (for 1 tablespoon), spices "for Adzhika."

Preparation. Tomatoes washed, poured over with boiling water and carefully peeled, cut into halves and cleaned of seeds. Pepper mine, cut and remove the peduncles and seeds. Garlic is peeled. Prepared tomatoes, peppers and garlic grind in a meat grinder. In the received weight we add horseradish, carefully we mix, we cover and we send all in a cold place, for a day that it was insisted.

In a cooled vegetable mixture we put spices, salt, crushed greens, sugar, pour vinegar and mix well. We lay out adzhika on jars, we cover them with polyethylene covers. Adjika is kept in the refrigerator.

Adjika with apples for the winter

Ingredients: Hot peppers (7 pcs.), Onions (0.5 kg), tomatoes (3-3.5 kg), sour apples (antonovka), carrots, Bulgarian pepper (all in 1 kg.), Garlic ( 400 gr.), Salt, vegetable oil (400ml.).

Preparation. We wash tomatoes, we dry and cut into four parts. Pepper is washed, we remove the peduncle and seeds, cut into small longitudinal strips. Carrots are cleaned and cut into small pieces. My apples, cut them into four and remove the middle with seeds. We peel the onions and garlic from the husk. If the bow is large, cut it into several pieces. With the washed hot pepper, we remove the stems, leaving the seeds. All the prepared components are ground with a meat grinder. Mass, what happened, abundantly salted.

Take the enamel saucepan and shift the vegetable mixture there, add the vegetable oil and mix. We put on a small fire and after boiling we cook 30-40 minutes (it's unforgettable to stir). We sterilize the jars, fill them with hot mass and roll them up. Adjika is ready for the winter.

Adjika from the plums

Ingredients. Plums (better than acid varieties 2 kg.), Red pepper (3 pcs.), Sugar (200 grams), several spoons of tomato paste, garlic (200 grams), salt.

This adzhika for the winter will be an excellent addition to a variety of dishes, especially it is combined with meat.

Preparation. Plums wash, drain, pull out the stone. Garlic clean. Pepper rinse, cut a peduncle, cut into several pieces. All grind with a mincer or blender. In the resulting mass put tomato paste, a glass of sugar and salt to taste. Put the mixture in an enamel saucepan and cook for about half an hour. Banks sterilize, fill with hot Adzhika and roll.

Adjika for the winter (gentle)

Ingredients: Tomatoes (2.5 kg.), 1 kg each. Carrots, sour apples, pepper, 1 glass of sugar, sunflower oil, vinegar, bitter pepper (1-3 pieces), salt, 2 heads of garlic.

Preparation. Carrots are cleaned and grated. Tomatoes and apples are washed, cut into four parts, with apples carving out the middle. With peppers, remove the stems and seeds. Tomatoes, apples and pepper are ground with a meat grinder. We put carrots, mix and cook for an hour in an enamel saucepan. Add sugar, sunflower oil, vinegar and salt. Stir thoroughly and boil another 15 minutes. Leave for 30-60 minutes. Add the garlic and spread it over the sterilized jars.
