Many of us still from school know what a strip of sand with jam. This recipe was very common in Soviet times, and even in the post-Soviet period. The sand strip was the pearl of the menu of many school cafeterias, station snack bars and even buffets of the Palaces of Culture.

This dessert could not be confused with any other confectionery work of the USSR. And in foreign kitchens it was hardly possible to find something so beautiful in its simplicity, uncomplicated decor, extreme sweetness and with all the same tempting. Well, what other cake could boast of a combination of sweet fruit jam and sugar fudge? Only 22 kopecks, by the way. And those who did not want to rub fingers spreading over the surface of a sweet white and pink mass, offered an analogue - without fudge, but with a crumb, from the same as the cake itself, of the dough. In addition to the reduced content of calories, the savings of 4-5 cents were also relied on.

Today, from the confectionery showcases, this simple dainty has pushed out the mousse cakes in velor or mirror glaze, fruit and berry desserts in glasses, air meringues and macaroons of all colors of the rainbow. Preparation of the dough

The cake consists of two shortcakes, jam and fudge. If you are going to strictly follow the GOST, this will be enough. But it is perfectly permissible to replace jam with jam. This will affect the quality of the dessert only positively. The top can be poured with thin jets of chocolate glaze - so you will get an even more beautiful strip of sand with jam.

The recipe for the cake we'll start with the test. For its preparation, rub in a bowl of 200 g of butter, previously briefly left on the table for thawing. Add the egg, try to achieve homogeneity. Continue stirring, pour 130 g of powdered sugar. Add a pinch of baking powder and salt. When the mixing result suits you, start adding flour. In total, you need about 350 grams, but do not rush. Add portionwise.

Before you do the rolling, the dough should be cooled. It turns out soft, supple and poorly shaped. So wrap it in a film and send it to the refrigerator for 40 minutes.

What to use as a filling?

The name itself contains an answer to the question about what was in school cakes, which many years ago were sold in any canteen. But can you compare the quality of the Soviet apple jam and the mass that we see on the shelves today? If you have a jam of your own production, you, of course, can safely use it. The main thing is that it is thick enough. But if you are planning to buy this ingredient, approach the choice with all responsibility. Do not take a fruit-berry mass of bright color, which is sold by weight. It is made not from the highest quality raw materials.

You can use homemade jam or jam for filling. Any taste will suit. But before work, jam with pieces of fruit is best smashed with a blender until homogeneity or even grind with a meat grinder.

In any case, while working with the test, send the jam in the refrigerator - it's more convenient to manage the cold one.

Baking

A strip of sand with jam, the recipe of which is used by professionals, is baked without jam. So roll the dough into a layer about a centimeter thick, put it on a baking tray and send it to a preheated oven to 220 degrees. It is cared for quickly, so monitor the situation. Time depends on the oven itself.

Once the surface becomes evenly golden, remove the baking sheet. Do not overdry, we still make a cake, not cookies.

Cut the rectangle of the cake exactly in half and set it aside to cool completely.

Sweet

Well, for now, let's take care of the next component, without which a real sand strip with jam is unthinkable. The recipe for sweets is very simple. Mix 200 g of sugar and 3 tbsp in a bowl with a thick bottom. L. water. Put it on a fire and warm it until the liquid turns into a liquid. Add 0.5 tsp. Citric acid (or lemon juice). Do not be afraid of bubbles! It's as it should be.

Leave the container with the syrup and allow it to cool.

Glaze

Do you want you to have an elegant strip of sand with jam? The recipe for glaze will help to quickly cope with the task. Mix 3 tsp. Cocoa, as much sugar and 2 tsp. Milk. Preheat, stirring. Bring to a boil and immediately remove from heat. That's all!

Decor

You will need slightly more than half a glass of jam. Apply it evenly to one half of the cake and immediately cover the second one. Let it stand, soaking, and we will finish the preparation of the fudge.

Pour the syrup into the mixer bowl, preferably high. Beat at the highest speed, watching as it thickens and whitens. Remember, what earlier was a strip of sand with jam? The recipe, which was used by most confectioners, suggested a stain on the surface. To do this, you need to divide the fondant into 2 parts and color one of them in pink or light orange color.

Apply to the surface of white fondant, spread out spatula. Top with a colored, trickle. Use a toothpick to make a divorce.

Put the cake in the refrigerator for at least an hour. Then cut with a very sharp knife on cakes of the desired size. According to GOST the strip measured 4 x 9 cm, but you can do it as you like. Top pour a thin stream of glaze in a chaotic order.

Simplified dessert options

In many sources, called "sand bar with jam", a simple recipe for grated cake is not less likely than the one we have already considered. The main difference is that you can bake immediately with jam. To save time and effort, you can simply divide the dough in half, roll out some, smeared with jam, and pick up the second part of the pieces and scatter them on top. You can make the second tier of the pie and from the same layer as the first. It's a matter of taste. The simple dough that is used for this dessert is always obtained, so it's very pleasant to experiment with it.

Ready cake will only cool, cut into cakes and cover with sweet.

Sand strip: feed to the table

If you intend to treat your friends to such a cake, take care of the serving. Serve it on plates or saucers with dessert forks and knives. It is perfectly permissible to eat this cake and just keep it in your hand - it depends on the format of the event and the traditions peculiar to your company.

A cup of tea, a brew of rose hips or coffee, will be good for a school cake, and cocoa will give this dessert a special nostalgic note.

In the summer, with a sand strip, chilled juices perfectly match, and in the cold season - hot drinks with a degree, for example a punch or grog.
