Of course, they already know which of them are edible: boletus, white, chanterelles, mushrooms and others. But there are lesser known, which are often found in coniferous and deciduous forests. It's about pigs.

What are swine (swine)?

Thin and thick swine is a fungus that grows in coniferous or deciduous forests. It has a brown color, a small foot, a cap with curved edges, plates of a yellowish hue. Of course, there are cases of poisoning these mushrooms, but with the proper preparation of them you can get a delicious and satisfying dish. The only thing that this mushroom is not stored for a long time, therefore requires immediate heat treatment, otherwise it spoils. Consider what to do with the swine, how to cook and use them.

Thick pork is suitable for marinating, pickling, roasting and preparing many dishes. The only important thing is to properly prepare it for use, to carry out a special treatment. Then you can safely eat mushrooms, without fear for your health.

How to cook swine?

First, the mushrooms are soaked in water for about five hours, while the procedure is repeated at least three times, changing the salted water. Then they are thoroughly washed, boiled in the first water for five minutes, drain the resulting broth and cook a second time half an hour, and the third time - forty minutes. A sign of the willingness of the pigs is to lower them to the bottom of the pan. Ready mushrooms can be used at your discretion. Let's consider several recipes for their preparation.

Fried in sour cream

Ingredients : one kilogram of mushrooms, one onion, three tablespoons of sour cream, two cloves of garlic, salt, vegetable oil, greens to taste.

If you do not know what to do with the swine, then you can just fry them with sour cream. This dish can become unique if it is added to your favorite greens, various spices, onions and garlic. In addition, it is very nutritious, so it can replace meat.

So, cooked mushrooms in advance cut into large pieces. In a frying pan in oil fry onions until golden, add the pigs and fry for twenty minutes, salt. Do not forget to stir them constantly. Then add sour cream, garlic and stew for five minutes. The prepared dish is left to stand for fifteen minutes, then sprinkle with chopped herbs.

Marinated chicken breast

Ingredients : two kilograms of mushrooms. For marinade (one liter): two tablespoons of salt, half a glass of table vinegar, five peas of black pepper, two bay leaves, five dill sticks, a pinch of cinnamon, two tablespoons of sugar, ten cloves of garlic.

Pickled pigs, the recipe of which we are considering, are an excellent spicy snack, which is stored for a long time.

First, prepare the marinade. For this, salt, spices, vinegar are put in water and cook for twenty minutes, periodically taking off the foam. Cooked mushrooms are cut, spread in a jar and poured with a cooled marinade. In each jar two tablespoons of vegetable oil are added.

Salting the swine hot way

Ingredients : five kilograms of mushrooms.

For the brine : six hundred grams of water, two hundred grams of salt, one gram of bay leaf.

Many are wondering what to do with the swine. The answer is simple: they can be salted. To do this, the mushrooms are cleaned from the ground and well washed. Then they are put in a saucepan, poured into water and brought to a boil. After that, they are mixed and the foam is removed. Cook the pigs twenty-five minutes.

After a while, the mushrooms are taken out, put in prepared cans and poured with cold brine, after that they are clogged and put in a cold storage place. So harvests pigs for the winter.

Salting the swine in a cold way

Ingredients : one kilogram of mushrooms, ten grams of salt, two grams of citric acid, another fifty grams of salt for pouring.

Preparation

Before cooking the pigs, they are soaked in one liter of water, where salt and citric acid are first put, one day, two times changing the brine. Then the mushrooms are put into kegs, where the salt is first covered with a small layer. The pigs are laid so that a six-centimeter layer is obtained. They are covered with bonnets and densely covered with salt.

Then the kegs are covered with a cloth and put under the press for three days. During this time they will condense, let the juice and cover with brine. The containers are placed in a cold place or canned with traditional prescriptions for preservation. Swine (how to cook them, we already know) can be stored in such a way long enough.

English salad with swine

Ingredients : two hundred and fifty grams of chicken meat, one hundred grams of salted cucumber, one hundred grams of fresh cucumber, fifty grams of radish, one hundred and fifty grams of celery stalk; Two hundred grams of swine, half a bulb, one bunch of lettuce, two tablespoons of mayonnaise, and a half spoons of lemon juice, one bunch of parsley, half a spoonful of sugar, one spoonful of mustard, salt to taste.

Preparation

Before cooking swine, you need to clean them, then boil in the way shown above. Chicken meat is boiled and cut into strips together with celery. Onion finely chopped, mushrooms cut into plates and fried in oil. All cucumbers cut into strips, radish - thin strips. Parsley finely chopped. In the dishes mix meat, mushrooms, celery, radish and cucumbers. Next, prepare the gas station. For this, mayonnaise is mixed with lemon juice, mustard and sugar are added.

On a large dish lay lettuce leaves, pour the prepared mass on top, pour all the dressing and decorate with greens.
