Salad "Little Fox"

Most likely, there was a salad "Fox coat" in the Soviet times, when on the shelves there were only canned goods, mayonnaise and gifts of collective farms - eggs, sugar, carrots. The orange vegetable contains a lot of useful substances: carotene, vitamins A and E - what can be better for the diet of a healthy citizen? A little later in the standard variation there were marinated mushrooms, salad "Fox fur coat" began to cook on the basis of boiled chicken or turkey, in some versions - veal, but the canonical recipe is his one.

For some reason, this salad is associated with the fall, although a bright and positive color is appropriate on the table at any time of the year.

You can only imagine how the "Fox coat" salad is harmonized with the traditional herring in the same "dress", variegated olive and vegetable greens !

Salad "Fox's fur coat" classic

To prepare the canonical recipe you need:

  • Herring salted - 1pc. Or 400-500 g of canned;
  • Boiled potatoes - 2 pcs;
  • Champignons fresh - 400 g;
  • Onion (you can use Crimean) - 1 pc;
  • Chicken egg - 3 pieces;
  • Carrots boiled - 2 pieces;
  • Lettuce leaves - 3-4;
  • Mayonnaise for refueling - about 250 g.

First, you need to boil hard-boiled eggs and cool them. If the herring is not cut - it needs to be cleaned, cut into cubes.

Champignons, previously soaked and washed, also chopped and sent to a pan to fry in oil over low heat. When there is a golden crust - remove and drain the oil.

Peeled potatoes and carrots rub on small and medium grated, respectively. So do with the eggs. Peel onion and cut into rings or grind.

At the bottom of the dish are laid salad leaves, they will decorate the salad "Fox coat". Top layers are laid out ingredients: potatoes (half), mayonnaise, herring, mayonnaise, champignons, onions, mayonnaise, egg, remaining potatoes, carrots. That's ready herring under a red fur coat - left to cool in the refrigerator for an hour and let it soak.

Salad "Fox Fur" with chicken

Ingredients for salad: boiled chicken fillet, onion, marinated mushrooms, chicken egg, carrots in Korean, mayonnaise, salt, sugar and vinegar.

This recipe is slightly simpler, as it is not required to fry mushrooms and cook carrots. Boiled chicken finely chop, boil the hard-boiled chicken eggs and grate, if possible, separating the protein and yolk - useful in the design.

Canned mushrooms should be chosen small - honey agarics, chanterelles, small champignons. Onions pre-marinate in the vinegar with salt and sugar, for 5-10 minutes.

Salad "Fox coat" is formed, as in the previous case, in layers: the dish is first laid out chicken meat, on top - marinated onions. Then come mushrooms, it's time for the first mayonnaise layer. Above the mayonnaise is an egg, part of which is left for decoration. Then - again mayonnaise (you can apply decorative pattern - mesh), on top - Korean carrots.

By giving the salad the shape of the fox torso, you can decorate the tail with protein, and the breast with a yolk, make "eyes" of cucumber or olives, draw "ears" or "antennae" with mayonnaise - which will be enough for imagination. After all, "Fox Fox" - a salad for creative housewives!
