Recipe for squid rings in Thai battered

This article presents a recipe for squid rings in battered version of Thai national cuisine. This dish is spicy and tasty, and it is quite simple to cook it as a stand-alone snack or serve with a side dish as a full-fledged lunch dish. The process of preparation is not difficult - just cut the squid rings, dip it into a simple flour and a mixture of spices and fry. As you can see, it's easy and delicious!

So, the recipe for squid rings in batter is the following. We will need:

  • 2 large squid;
  • 1/2 cup of wholemeal flour (you can use semolina);
  • 1/2 teaspoon of tea leaves;
  • 1/8 of a spoonful of tea powdered chili powder or cayenne pepper;
  • 1/8 of a spoonful of tea universal oriental seasoning;
  • A pinch of ground white or black pepper;
  • 1 glass (or more) of vegetable oil (for example, rapeseed oil) for frying;
  • Salad or fresh coriander leaves for serving;
  • Thai sweet chili sauce (available in most supermarkets).

Preparation

Place the coarse flour in a shallow bowl or sprinkle it on a plate. Stir with salt and spices and set aside. Cut the squid rings on the cutting board. Using a sharp knife and, moving towards you, just make even slices about 1 centimeter wide. If you use frozen squid rings for cooking, defrost them in the refrigerator.

Well unfold the received rings and carefully roll one by one in a mixture of flour and spices so that they are covered with a thick layer. Place prepared squid on a floured clean plate next to the stove.

Fill the oil in a small or medium frying pan (the more it is needed, the more oil you need), its layer should be at least 2.5-3 centimeters, so that the recipe for squid rings in batter is fully met. Make the fire large and wait until the oil begins to bubble or "move" from the bottom of the pan. To make sure that it has heated enough, use forceps to place one squid ring into it. If the oil hisses and starts to quickly fry, it is ready. Reduce the heat to medium to prevent splashing.

Put so many rings of squid in the oil, which can fit in one layer at one time. Fry for about 1 minute, and then flip the rings to cook them on the other side. Squids should be light golden in color. Avoid excessive frying, otherwise the dish will become stiff and "rubber".

When the seafood is cooked, pull them out of the butter and place on a napkin or paper towel to lightly dry. Serve immediately in a hot form. If desired, squid rings in batter (photo shows how refined the dish is) can be served on a "cushion" of salad or fresh coriander. Pour the dish with Thai sweet chili sauce and enjoy!

You can also use a different kind of dough, which has a slightly unusual flavor. The recipe for squid rings in batter is as follows: mix 1/4 cup corn flour in a dish , 2 tablespoons cornstarch corn starch, 2 teaspoons universal seasoning for seafood, 1/2 teaspoon of tea salt. Otherwise, the frying and preparation process is almost the same as mentioned above.
