Mushroom soup: three versions of soup

Mushroom soup is a fragrant and satisfying first course, which is often prepared by Ukrainian housewives. There are many variations of this soup. But the main ingredient - mushrooms remains unchanged. They can be fresh and dried. We offer you several recipes for every taste. Good luck in the kitchen!

Yushka mushroom in the Transcarpathian

Grocery list:

  • Flour (w / c) - two glasses are enough;
  • Cube of mushroom broth - 1 pc .;
  • Medium bulb;
  • 300 g of champignons in fresh form;
  • Sour cream of medium fat content - 1 tbsp. L .;
  • Greens (coriander, parsley, sprig of dill).

Practical part

  1. We spread it on the table, everything from which the mushroom soup will be cooked. What's next? We take champignons, wash them in running water. Thoroughly clean the hat with a knife. The legs do not need to be cut off. Everything goes into action. Mushrooms are cut into small plates.
  2. With the bulb removed from the husks. The flesh is first mine, then crushed with a cube. Fry on low heat. We shift the contents of the frying pan into a plate. While we put aside.
  3. Now we send mushrooms to a hot frying pan. Fry, using refined oil. Do not forget to turn the pieces. The whole process of frying takes no more than 15 minutes. Turn off the fire.
  4. We take another frying pan. It should dry the flour in a dry way. As soon as it gains a golden hue, immediately turn off the fire. The flour should completely cool down.
  5. The pan is filled with water (1/2 volume). We put on the stove. We wait until the liquid begins to boil. Add a cube of mushroom broth to the pan . Stirring. We also put fried mushrooms and onions. Again, stir.
  6. In a bowl, combine the sour cream and the cooled flour. The resulting mixture is sent to the broth. If there are lumps, then do not worry about it. Just stir the broth, then they will disappear. After 5-10 minutes, a mushroom soup according to the Transcarpathian prescription will be ready. Let the dish stand a little under the closed lid. We distribute it on plates, decorating with twigs of greenery. We wish you the most pleasant appetite!

Cooking mushroom soup with beans

Necessary ingredients:

  • Red or white beans - enough for 250 g;
  • 0.5 kg of potatoes;
  • Medium bulb;
  • 50 grams of refined oil and fresh mushrooms.

Step # 1. We thoroughly rinse the mushrooms with tap water. Put them in a pan. Fill with water. We cook until ready. This process takes 20-25 minutes. Broth is not poured anywhere. Cooked mushrooms should be cooled. Then grind them with a knife.

Step number 2. Potato tubers are washed, peeled. We cut it with an average cube.

Step # 3. Put the beans in a saucepan, pour cold water. We cook for 60 minutes.

Step No. 4. Add the beans and potato cubes to the pot with the mushroom broth. We put on the fire. As soon as the liquid begins to boil, we lay mushrooms in the future soup. Solim. Cook until the potatoes soften.

Step 5. Clean the bulb with a cube. We send it to a hot frying pan. Fry by applying oil. Pieces of onions should acquire a golden hue. This passivation is added to the pan. After 5 minutes turn off the fire.

Step number 6. We got a fragrant mushroom soup. It remains to pour the soup on plates and invite the household to the table. It is recommended to serve this dish with black bread. Each portion is decorated with chopped herbs or whole branches (cilantro, dill).

Mushroom soup of dried mushrooms

Grocery set:

  • Average bulb - 1 pc .;
  • Green onion - half a beam;
  • 100 grams of dried mushrooms and small pasta;
  • One large carrot;
  • Refined oil - 3 tbsp. L .;
  • 1.5 liters of broth;
  • Favorite spices.

Cooking process

  1. Where do we start? In a bowl, place the dried mushrooms. Fill them with boiling water (300 ml). Leave for 20 minutes. Then you need to strain the mushrooms. We do not pour water out from under them, but we keep them. We still need it.
  2. In the pan, pour in the right amount of oil. Warm up on the stove. Add the crushed bulb (preferably a dice) and grated on a large grater carrot.
  3. In the pan, pour in the liquid that has remained after cooking the mushrooms. That's not all. Mushrooms cut into medium pieces. We send to other ingredients. We wait until all this boils. We reduce the fire to a minimum. We cook for 1 hour.
  4. Fire can be turned off. In the soup, add chopped green onions. Cover the lid. We record 10 minutes.
  5. In another saucepan, in salted water, boil small pasta. What's next? We send pasta to the soup. Stirring. Sprinkle with your favorite spices. If necessary, heat the soup.
