How to store cloudberries in winter?

Moroshka is a delicious and very useful northern berry. Preferably eat it fresh. But if suddenly the landlady decides to make reserves, then she may have questions. After all, the berry is not the most popular, and not everyone knows what can be done with it. For example, cloudberry with sugar: how much and how to store it? And frozen? Or in the form of jam? Let's consider some recipes.

Features of work with a berry

This berry should be able to collect in time. It is advisable to do this in July, while it has a red-yellow color. At all about everything only a couple of weeks, then the berry overrides and becomes so juicy that it literally falls apart - it is simply impossible to collect.

Take 1 kilogram of berries and sugar, and a half cup of water.

  1. Recover the cloudberry, rinse well under running water and let the liquid drain.
  2. Pour water into the pan, bring to a boil, add sugar and cook the syrup.
  3. Carefully lay out the berries, stir and set a weak fire.
  4. Cook the cloudberries until they are ready. If necessary, preferably do not mix the mass with a spoon, but shake.
  5. In pre-sterilized jars, pour out the jam, roll them up, turn them over, wrap them and keep them in such condition until it cools down completely.
  6. Place the jars in a cool and dark place for storage.

The recipe of jam on honey is popular. The algorithm is about the same, only 1 kilogram cloudberry instead of sugar is taken 1.5 kilograms of honey. The water for this recipe needs to measure 0.5 liters.

Frozen jam

Prepare: cloudberries, sugar, water, pot, cans of 0.5 or 1 liter, covers, a machine for rolling.

  1. Sterilize the jars.
  2. Smooth the beetroot carefully and remove the sepals, spreading the berries in parts to a colander. Put a bowl or pot under it, so as not to lose the delicious juice.
  3. Prepared berries move to the can as follows. Lay a two-centimeter layer of cloudberries in a container and fill it with two tablespoons of sugar. Then, in the same way, a new layer of berries and sugar. After each layer, the jar needs to be shaken gently for even distribution.
  4. You can fill the tank with a slide, as the berries will later settle. Sprinkle the last layer of sugar. Pour into the jar juice, which stood out in the process of picking berries.
  5. Cover the jars (until they are rolled!) With sterilized covers and leave them alone for four hours.
  6. Preheat the oven to 120 degrees and send cloudberries into it for twenty minutes.
  7. Then increase the temperature to 150 degrees and keep the jars in the oven for another half hour. If the juice splashes, reduce the temperature a little.
  8. When the time runs out, take out the jars and roll them up immediately. Each should be shaken a little and put down the lid. Let them stay in this position until the contents cool down completely.
