How to salt the freckles. The easiest way

In the season of mass harvesting, many mushroom pickers ask themselves how to prepare mushrooms for the winter. There are a lot of cooking options for this product. Mushrooms can be fried, marinated, salted and boiled. But some species are suitable only for a certain method of harvesting. To such it is possible to carry and freckles. They contain milky juice, which gives them bitterness and, if improperly treated, can cause poisoning. So let's talk about how to salt the freckles.

Usually they are salted in a cold way or marinated. The cooking process lasts a little longer than in some other types of mushrooms. However, the result is worth it to wait.

Volnushki should be carefully sorted out by removing old and spoiled specimens. Then they are washed using running water. After that, mushrooms are soaked in slightly salted water. This process lasts about 3-5 days. For their soaking it is necessary to take enamelware or a wooden tub. Mushrooms should be placed in a prepared container and put the load on top to prevent them from floating. During the soaking period, water should be changed at least twice a day. Keep the container with mushrooms in a cool place.

After soaking in the waves, the bitterness disappears, and the hat becomes soft and not brittle. Therefore, this process must be carried out before pouring off the wavelets.

The most optimal for the preparation of freckles is salting in a cold way. Soaked mushrooms are laid out in a prepared container (except aluminum) with the caps down, forming layers. Each two layers should be poured with salt and spiced. They need to be prepared before pouring freckles. Usually take pepper black peas, dill (very well fuses with mushrooms), bay leaves and leaves of some plants at will (currants, cherries, etc.)

For one kilogram of mushrooms we take about 50 grams of salt.

When all the mushrooms are laid, they should be covered with clean gauze (in several layers) or with a rag. Then we lay a wooden circle, and from above we put a small load. We leave the freckles for a few days. Usually, after 5-6 days, brine appears. The fungi become dense. If this does not happen, you should increase the weight of the load and cover the container with a film. Mushrooms should stand in a cold place.

In the process of pickling, mold can form from above. In this case, it is necessary to thoroughly wash the wooden circle and change the rag. You can remove the top layer of fungi, which formed mold. As salting, the mushrooms will decrease in volume. You can report new layers, also pouring them with salt and shifting spices.

After 1.5-2 months you can already eat salty freckles. Salting does not require much trouble.

You can also conserve pickled mushrooms. To do this, take clean glass jars of 0.5 liters and put in each of them a few peppercorns (fragrant) and one laurel leaf. Mushrooms are thrown in a colander and washed with boiled water. Put them in the banks.

Next, you need a pickle in which the freckles are soldered, boiled and filtered. In the jars with mushrooms pour two tablespoons of vinegar (5%). Then we top up the brine in them. If the brine is not enough, then we replace it with freshly prepared ones. To do this, we brew 20 grams of salt in hot boiled water (1 liter).

After that, you should cover the jars with metal lids (but do not roll them up!) And sterilize them for 40 minutes. Next, the lids are sealed tightly and the jars are left to cool completely. That's how to salt the freckles in a cold way and keep them for a long time.

Salted mushrooms can be served as a snack for any dishes and side dishes.

Knowing how to prepare freckles, you can save the entire harvested mushroom crop, then later still enjoy the wonderful qualities of dishes from them.
