Eggplants baked with cheese and tomatoes

Summer has come, and this means that it was possible to pamper yourself with yummy vegetables. Eggplants baked with cheese and tomatoes are probably one of the most favorite dishes in many families.

It will take: a couple of large eggplants, 100gr. Hard cheese, garlic, greens and 4 tomatoes. Eggplants are cut into 2 parts along and boil for a quarter of an hour in salted water. Tomatoes cut into circles, the cheese is rubbed on a small grater. Two garlic cloves are finely chopped and mixed with cheese. Boiled eggplants are taken out of the water, soaked in paper towels and laid on a greased baking sheet. On top of them put tomato slices, salt, sprinkle with cheese with garlic and herbs. Bake for 20 minutes at a temperature of 200 degrees.

You will need: eggplant - 2-3 pcs., 3-4 large tomatoes, 3 cloves of garlic, a couple of spoons of mayonnaise, 2 eggs, 200 g. Cheese, salt and greens. Eggplants are cut into rings 1 cm thick, salted and left for 15 minutes. Garlic is passed through a press, mixed with mayonnaise and finely grated eggs and cheese. Tomatoes cut into slices, after which the vegetables are collected on skewers - aubergine circle, a layer of cheese, a tomato ring, again cheese and cover with another eggplant mug. Pyramids are sent to the oven to bake at minimum temperature for 40 minutes.

For preparation it is required: a pair of aubergines, hard cheese - 100 gr., 3 large tomatoes, 3 cloves of garlic and mayonnaise. Eggplants and tomatoes cut into slices. On a baking sheet, oiled, spread the eggplants, grease them with mayonnaise and cover with a tomato ringlet. The grated cheese is mixed with finely chopped garlic, and then sprinkled with tomato rings. Eggplant baked in a preheated oven for a quarter of an hour at a temperature of 220 degrees.

For cooking you need: 200 gr. Cheese, a couple of large tomatoes and two eggplants, mayonnaise and hard cheese, about 150 grams. Eggplant washes and make 2-3 incisions along them, not reaching the end for a couple of centimeters. Brynza is cut into thin long layers, and tomatoes - in circles. Then they are laid between layers of eggplant, so that the alternation of ingredients: eggplants, cheese, tomatoes. Above, they are abundantly greased with mayonnaise and sprinkled with grated cheese.

It will be required: aubergines - 4 pieces, large tomatoes - 3 pieces, 200 gr. Cheese mozzarella, a bunch of fresh rosemary and olive oil. Aubergines are washed, cut along into 2 parts and rubbed with salt. Tomatoes are placed in boiling water for half a minute, and then peeled from them. After 20 minutes, the eggplants are washed off with salt and make "boats" out of them, taking out the pulp from the middle with a spoon. Then the carved pulp is crushed, tomatoes cut into small cubes, and a couple of rosemary twigs are added. Mix and fill with the resulting vegetable mixture prepared eggplant. The pan is poured with olive oil, and the "boats" are put on it. On each mat, put a couple of small slices of cheese. Preheat the oven to 200 degrees and send the pan to it for 20 minutes.

Eggplants with minced meat are not less delicious than eggplants baked with cheese and tomatoes.

It will be required: a pair of large eggplants, several leaves of basil (or dried herbs), 200 gr. Cheese mozzarella, 300 gr. Minced meat, 3 large tomatoes or 4 tablespoons of tomato paste. Tomatoes are doused with boiling water, peeled from them and ground in mashed potatoes on a grater or blender. Minced fry in a pan, adding to it crushed tomatoes or tomato paste, add a little water and stew for another 5 minutes. Eggplants are cut into slices, fried in olive oil and spread into a baking dish. On top put basil and a layer of minced meat, then eggplant and again stuffing. Sprinkle with grated cheese and put in the oven for half an hour at 200 degrees.
