Dishes from pearl barley

Pearl barley is not as popular as, for example, buckwheat, rice, peas. But from this it does not become less useful. This cereal contains fiber, vitamins and minerals. Due to its high calorie content and nutritional value, most nutritionists recommend eating dishes from pearl barley in children's food and in the diet of athletes. In addition, pearl rump is recommended for eating and for older people, and as often as possible. Despite the high caloric content of the dry product, the dishes made of pearl barley are considered dietary.

Risotto with mushrooms

It is necessary:

  • One and a half liters of chicken broth;
  • A spoon of butter;
  • bulb;
  • Two hundred grams of pearl barley;
  • A spoonful of thyme;
  • Bay leaf;
  • olive oil;
  • Five hundred grams of mushrooms;
  • garlic;
  • greenery;
  • Seasonings.

Keep the chicken broth on the stove hot, but make sure that it does not boil. Melt the butter, cut the onions as small as possible and put them in butter. Cook for about five minutes. Then put the onion pearl barley, bay leaf, thyme to the onions. Pour the rump with greens with two glasses of broth. Wait until it boils, and cook for ten minutes. Stew until all the broth is boiled, gradually adding a new portion each time. Fry the mushrooms in olive oil, at the end add the garlic and cook for another three minutes. Put the mushrooms in a pearl barley, add seasonings. Leave the bay leaf before serving. Put a risotto on the plate and sprinkle it with grated cheese.

Similar dishes of pearl barley can be made vegetarian, you just need to use olive oil and replace the chicken broth with vegetable. Who loves greens, you can add to the finished dish basil, coriander, parsley, dill.

Pilaf from pilaf

It is necessary:

  • A glass of pearl barley;
  • Three glasses of water;
  • Three hundred grams of champignons;
  • Eight onions;
  • Five hundred grams of carrots;
  • Two hundred grams of vegetable oil;
  • One spicy pepper;
  • garlic;
  • salt;
  • spice;
  • Tomatoes - three pieces;
  • Bulgarian pepper - three pieces;
  • Pork smoked ribs and brisket - five hundred grams.

Peel and rinse the perlovku. Put on a towel and dry. Onions and carrots peel, garlic also clean and rinse. Mushrooms are washed and cut into plates. Sharp pepper finely. Pour barley in a dry frying pan for a few minutes.

Pour oil into the bowl. Cut the onions into rings or semirings, cut the carrots into strips. Dip the vegetables and mushrooms in a frying pan. Fifteen minutes later, put a finely chopped bell pepper and tomato. Pork ribs and brisket, divide into small portions and add to the vegetables. Add water and wait until it boils. Transfer the pearl barley from a dry frying pan to the vegetables.

Add the garlic and cook under the lid until it is ready, namely about half an hour. Turn off the finished pilaf and wrap it in several blankets. You can put cushions to be sure. Leave in wrapped form for another forty minutes. Then stir, and you can call everyone to the table. By the way, dishes from pearl barley (for example, pilaf) can be sprinkled with herbs.

Salad with pearl barley

It is necessary:

  • One fourth of a glass of pearl barley;
  • One hundred grams of boiled beef;
  • One cucumber;
  • One carrot;
  • garlic;
  • Mayonnaise for refueling;
  • salt;
  • Salad leaves.

Pearl barley rinse, pour a glass of water and add salt. Cook for forty minutes. Cool, drain the water. Beef with cucumber finely chop. Put the salad leaves on a plate, lay cucumbers and meat on top. Lubricate with mayonnaise. Put the barley on top. Carrot sodium and mix with garlic and mayonnaise. Lay out on the pearl bar and garnish with herbs.

Dishes from this useful cereal can be thought up very much. But for some reason in our time it is rarely used not only at home, but also in cafes and restaurants. However, based on this cereal, they prepare therapeutic dishes in sanatoriums and hospitals, for example, porridge porridge is very common.
