It's easy and easy to prepare, and the resulting dish will be surprisingly tasty and rich in all the necessary vitamins to maintain strength, tonus and energy. And the list of components is not so long and exotic. Time to prepare it will take very little, which will pleasantly surprise even those who do not like spending more than an hour a day in the kitchen.

So, you decided to make broccoli soup. The recipe is quite simple, but requires compliance with the proportions of the ingredients. You will need:

  • Fresh cabbage broccoli - 0.6 kg;
  • Leeks in quantity of 1 pc .;
  • 3 cloves of fresh garlic;
  • Greens (parsley and basil - for ¼ cup);
  • Potatoes - 1 pc .;
  • A quarter of a glass of low-fat sour cream;
  • Vegetable broth in cubes - 1 piece;
  • 2 slices of bread (preferably one that is made from wholemeal flour);
  • 1 liter of water.

Soup-purees from broccoli begin to cook with the fact that they bake bread for toast. His pieces are cut into smaller ones, they are laid out on a pre-oiled baking sheet, a little oil (for example, olive oil) is added from above for the aroma. We mark 10 minutes and watch that the bread is lightly browned to an appetizing crispy crust of golden color.

While this part of the dish is being cooked, put the pan on the stove and add a little oil to it. There we spread the crushed leeks and stew the greens until it becomes soft. On average, this takes about 5 minutes. Now it was the turn of garlic. We add it to the onions and continue cooking for another half an hour. By this time from the pot must be felt a specific spicy aroma, which is so famous for soup-puree from broccoli.

After that, you can already pour all the water, as well as crumble soup in a broth cubes for a more saturated taste and a pleasant thick consistency. Do not forget about the potatoes, cut into cubes. The liquid must be brought to the boiling point, then leave it to languish under the lid for another 10 minutes. It's time for the main ingredient. What kind of soup puree from broccoli without cabbage of the same name? It is thanks to her that this dish is a real storehouse of vitamin C. Cook soup should be still about 5 minutes. By this point, the cabbage should soften and add a dish of density. The soup will get a nice green color. Do not worry, unless the mass is particularly homogeneous. After that we'll fix it.

We remove the saucepan from the fire, and let its contents cool down. After that, it is poured into a blender, add the remaining greens and whisk properly, until we get a real broccoli soup. It should be thick, gentle, lush and without any lumps. But the first dish should be hot, so warm up the soup in a clean pan. It can not be brought to a boil - it will be enough to simply serve the table warmed up.
