After the boiling occurs, foam is removed from above (if formed), everything is slightly salted, put carrots, onions, bay leaves, spices (cumin, pepper, cloves, etc.), cleaned and cut into large pieces.

On low heat, the dish is cooked for two hours, after which the shank is removed and laid out on a baking tray, covered with foil and put in a preheated oven to an average temperature, where it is baked for about half an hour. Half a glass of dark beer mixed with a tablespoon of sugar. From the prepared dish, foil is removed, it is put back in the oven for 20 minutes, periodically (every 3-4 minutes) it is poured with the obtained mixture of beer and sugar. Preparing the shank before the formation of a crimson crust. On the table, the dish is served hot, as a side dish to it you can use boiled vegetables.

There is the following recipe for how to cook the pilaf in an oven without cooking. To do this, a piece of pork (preferably with a thin layer of fat under the skin) is washed, if necessary, cleaned and dried using a paper towel. On the top of the shank, small oblique incisions are made, into which several pieces of cloves are inserted. From the bottom, deeper cuts are made (in such a way that they get the "meaty" part), they insert cleaned cloves of garlic. The whole piece is rubbed with a mixture of salt with pepper, watered with mustard, mixed with soy sauce, left in the refrigerator for the night. The next morning the preparation of the rudder continues. It is sprinkled with crushed greenery, wrapped in foil and put on a baking sheet in the oven, heated to a minimum of 1.5-2 hours. After this time, the dish is removed foil, the temperature rises to 220 degrees, the shank is left to brown. You can serve it both cold and immediately from the oven, as a snack or a separate dish (in the latter case it is better to use garnish).

Talking about how to prepare a wheel, you can not forget about the recipe of a roll from it, which is perfect for a festive table. If the meat is taken in the market, then it is best to soak it in water for a while, then clean it and rinse it again well.

Pour a piece of cold water and put on the fire. After boiling here put peeled onion, bell pepper, bay leaf. Cook the dish on a small fire for about 3 hours. It is important that the shank does not fall apart and does not lose its original appearance. The cooled piece is laid out on gauze, a cross-section is made, the bone is pulled out, and the meat unfolds in a layer. It is salted, peppered, sprinkled with chopped garlic, you can put stuffing here. For it, chopped herbs, mushrooms, prunes and many other things are used, on the taste and culinary preferences of the cooker.

Then a tight roll wrapped in gauze is rolled up. It is placed under the load in the refrigerator for several hours, after which it is cut into pieces and fed to the table.

Thus, almost all the recipes for how to prepare the wheel do not require special skills and are fairly simple, however, require a little more time than cooking conventional meat.
