Shish kebab from minced meat (lulia-kebab): recipe

What is the name of the shish kebab from minced meat on the grill? In the east, this dish is called "lyulya-kebab". It belongs to the Arabian cuisine and is an oblong cutlet, fried on charcoal.

Traditionally, minced shish kebab is prepared from onion and mutton. In this case, the meat should be very fat, and the onions will be quite a lot.

  • Pulp of fresh lamb - about 1 kg;

  • Fat mutton - about 150 g;

The real lyulya-kebab on the skewers is prepared only from chopped meat. To do this, fresh lamb is thoroughly washed, after which it is intensively chopped with culinary knives. In exactly the same way with onions and pre-prepared fat.

Once all the products are crushed, they are combined in one bowl, peppered and salted to taste, and then kneaded by hand, periodically tossing minced meat on the table. As a result of such actions, a homogeneous and rather viscous product should be obtained.

The viscosity of minced meat is very important for lyulya-kebab. After all, in the process of heat treatment, the meat product should hold well on the skewers, and not be in the coals. Formation

How to properly form a classic lyulya-kebab? First you should moisten your hands in cold water. This is to ensure that the minced meat does not stick to the palms. After this, you can safely proceed to the formation of kebabs.

Taking the prepared mutton forcemeat in the hands (the size of the palm), from it you should make a sausage with a diameter of 4-5 centimeters. Next, it is required to carefully pour on the skewer. If in the process of this the meat juice is allocated, then before forming the dish, minced meat can be squeezed slightly.

Preparing the semi-finished products, they should be sent to the freezer for 5 minutes. This will contribute to the solidification of fat, which will well connect all the sausages, intended for cooking lyulya-kebab.

Frying on the grill

How to fry shish kebab from minced meat on a grill? For this it is required to kindle firewood and get good coals. For cooking lyulya-kebab, the temperature in the grill should not be above 550 degrees.

After the hot coals are covered with light ash, all the skewers with ram's stuffing are installed above them. In this form, the lulia is cooked for about 20-25 minutes. In this case, the skewers are periodically turned over so that the dish is fried evenly, on all sides.

As you can see, there is nothing difficult in the preparation of the classic lub-kebab. The main thing is to have patience.

The formation process

If you decide to make a kebab lub in the oven, then you will need not classic skewers, but long wooden skewers. The process of planting minced meat on them is similar to what was described in the first recipe.

Having soaked your hands in cold water, you should take a sufficient amount of pork product, form a kind of sausage from it, which in the future must be carefully placed on the skewer.

Bake in the oven

Once the kebab kebab has been formed, all the wooden skewers are moved to the baking sheet. Additionally, it is not necessary to lubricate it with oil, since mincemeat has a sufficient amount of fat.

In this form, the semi-finished products are sent to an oven, where at a temperature of 190 degrees they are baked for about an hour. It is very important not to overeat minced meat. Otherwise, the lub-kebab will turn out to be dry and not tasty.

To ensure that the dish is baked evenly, skewers with meat products should be periodically turned over. If, in the process, you notice that the shish kebab is lightly adhered to the baking sheet, then it can be smeared with a regular spatula. However, it should be done very carefully, otherwise the whole dish will simply fall apart.

Serving an Arabic dish for a family dinner

Prepare a delicious and delicate kebab kebab in the oven, carefully remove it from the baking tray and place on a plate that is pre-decorated with lettuce leaves and other vegetables. Also, next to the prepared shish kebab, you can put a small kremanka filled with a fragrant sauce.
