Is it difficult to make a yeastless puff pastry?

At this time, a half kilogram of flour is sieved and poured out by a slide with a groove on the table. About a hundred grams of flour is left for subsequent operations. A glass of water with a dissolved teaspoon of salt and one gram of citric acid pours into the cavity. The water can be more or less - depends on the flour. Mix the dough and roll into the bowl, which must be removed for half an hour in the refrigerator.

The remaining flour is mixed with butter, grind to the grits and form a rectangular stratum, which is also put into the refrigerator. After half an hour, chop the dough crosswise and unfold the ball. The resulting cross is rolled up to a square shape, an area twice as large as the area of the oil semi-finished product. Put in the middle of the oil billet and wrap the edges of the dough so that it is covered. Roll out the whole piece to a thickness of two centimeters, then fold it four times and leave a covered napkin for twenty minutes. The operation is done three times. Bezdozherzhevoy puff pastry for pie is ready. From it, you can also make other pastries: pies or cheesecakes.

To prepare a lean dough for pizza, you need to do the following. Sift a glass of flour, make a slide from it and, in the previous recipe, create a groove. Pour a glass of water there, add an egg (or two, depending on the size). In contrast to the first recipe in this case, you need to add a few drops of vinegar or citric acid. Salt - to taste. Stir the dough until it is completely out of hand and utensils. Roll the dough into a bowl and leave it on the table for half an hour. From margarine (butter) and flour to make a seaming - a quadrangular layer. Floured pastry dough into a rectangle with edges thinner than the middle. Prepared a sunset put in the middle of the resulting rectangle, close the edges of the dough and wipe the edges. The resulting blank should be rolled out without strong pressure to a thickness of fifteen millimeters. Sweep the excess flour and fold the workpiece four times. After fifteen minutes, repeat the operation and thus do five times. From the resulting test, a cake is molded according to the size of your pizza mold and is stacked on it. Then everything is simple - choose the filling, put it on a cake and in the oven! Before baking puff pastry, it is recommended to pierce it in several places with a fork. This will help avoid unnecessary swelling of the product.

Of course, you can buy ready-made bezdrozhzhevoy puff pastry and make it a good pastry. But the point of honor of each hostess is to please the household members and especially the guests with delicious pastries, in which everything from the idea to the finished product is made by hand.
