In a separate dish, you need to beat 3 eggs to the state of the foam (the duration of the process is about 10 minutes) and add the flour to the egg foam. Of all this, the dough is kneaded. Add the crushed orange in the blender (before that, it should be boiled in boiling water for 5 minutes) and a few cranberries. Now the dough should be kneaded very well already with all its ingredients. Inside is put any stuffing to your choice (condensed milk, jam, jam, berries, fruit).

The finished dough is laid on the forms, covered with oiled parchment and baked in the oven for 40 minutes at a temperature of 180 degrees.

Yoghurt cupcakes without butter and berries

Cooked on this recipe muffins are obtained especially delicate, due to the yoghurt component of the dough. In order to bring into the world such a work of confectionery art, you need to mix in one bowl 100 ml of yogurt, the same amount of sugar and a couple of eggs, here is added a pinch of vanillin. In another bowl, 100 grams of instant oat flakes are combined, one and a half cups of flour, a pinch of salt, a nutmeg on the tip of a tablespoon and one and a half teaspoons of baking powder for dough.

Separately, you need to prepare berries - they need to roll in flour. As an option, you can use blueberries (it can be replaced by any seasonal fruit).

Now the contents of the two bowls and berries have to be put together and knead the dough. The finished dough is poured into a pre-prepared form, lined with oiled parchment, and baked for an hour at a temperature of 180 degrees - gentle yoghurt cupcakes without butter are ready.

Orange cupcake

This kind of cake is prepared with the addition of raisins. Before preparing the dough, you need to prepare raisins and oranges. As in the first recipe, which describes how to prepare classic cupcakes without oil, the orange must be welded and crushed in a blender; Half a glass of raisins should be thoroughly washed and poured with a spoon of cognac in order for it to be absorbed.

Now you can start kneading the dough. First you need to separate three eggs - separate the yolks from the proteins. After that, yolks are ground with an incomplete glass of sugar and mixed with orange, half a glass of flour, a teaspoon of baking powder and a pinch of vanillin, whites are whipped into the thickest foam and only then combined with the orange mixture. The combined ingredients must be stirred until a homogeneous mass is formed, then add the swollen raisins to it.

The finished dough is poured into a mold and sent to bake in the oven for 40 minutes (the optimum temperature is 180 degrees). When the cupcake is ready, it needs to be cooled and, if desired, it can be sprinkled with powdered sugar.
