Products for cooking the main squash caviar:

  • One kilogram of courgettes;
  • Half a kilogram of carrots;
  • Half a kilogram of sweet red pepper;
  • Eight medium-sized bulbs;
  • Four spoons of tomato paste, in the composition of which there is no starch;
  • Two tablespoons of salt;
  • One and a half tablespoons of sugar;
  • One and a half glasses of vegetable oil;
  • One and a half teaspoons of black pepper;
  • One tablespoon of acetic acid.

Zucchini clear of peel and seeds. It is best to use young fruits, then the caviar will be more tender, and the cooking time is not so long. From seeds and stems, we save sweet peppers. Onions and carrots are cleaned. All the vegetables are thoroughly washed and cut into small pieces. Then we pass the prepared vegetables through the meat grinder.

The mixture is well mixed and poured into a saucepan. It is better to take aluminum and wide. The ideal option is a brazier. We put the caviar on fire and bring it to a boil. As soon as the vegetable mixture begins to boil, reduce heat and pour in sunflower oil. I prefer fragrant, unrefined oil. Now cook the mixture for 50-60 minutes, from time to time stirring, so that our squash caviar does not stick to the bottom of the pan.

After the time has elapsed, add sugar, salt, tomato paste to the vegetable mixture and mix everything thoroughly. We cook for another 15-20 minutes.

After that, add acetic acid and lay out on previously sterilized jars. We roll them with metal covers.
