Prepare:
- 1 kilogram of ripe black currant;
- 2 kilograms of granulated sugar.
Of course, you can take more berries, the proportion is very simple - 1 to 2 (that is, for every kilogram of currant you have 2 kg of sugar and so on). Wash the berries, and then dry it. The next step will be the grinding of currants in a blender or mixer, with the use of plastic nozzles, not metal ones , as much as possible . Without stopping the process, add sugar in fractional parts. When it has dissolved, pour the mass into the dishes - glass or enameled, and let stand. The grated currant with sugar does not need cooking, it should be simply poured over previously sterilized jars, rolled up and lapped in a cool place. So it can be stored up to six months.
Ripped red currants with sugar
Of course, you can cook an excellent sweet billet not only from black, but also from red currant. To do this you will need:
- 1 kilogram of red currant;
- 2 kilograms of granulated sugar.
As in the previous recipe, the berry should be washed first, and then dried (you can get soaked with a paper towel). Next, the red currant needs to be ground with a mixer with plastic nozzles, but you can do it manually, using a wooden pestle. Although, if you are preparing a large portion of "cold jam", then there will be a lot of work. After the berry has turned into mashed potatoes, in small portions in a mass pour out the sugar, stirring thoroughly. When everything is ready, pour the resulting mousse into a plastic basin and let stand for a while (you can leave it overnight). After the specified time, the rubbed currant with sugar is poured into sterilized glass jars and rolled up with lids. Keep the jam for up to six months.
