Duck leg recipe with oranges, apples and cranberries
Duck legs prepared by this method are very juicy, tender and fragrant. For this dish, we need the following products: half a kilo of duck legs (usually three or four legs), one large onion, three medium-sized apples, an orange, 150 grams of cranberries, salt, vegetable oil.
Cooking process
We chop the onions in half rings, and the oranges in circles. Apples peel, remove the core and chop into small pieces. In a deep frying pan we warm up the vegetable oil and fry the whole leg on both sides before browning. Add onion semirings, salt and stew under the lid for 10 minutes. After that, without turning off the fire, lay out the apples, cover again with a lid and continue cooking for another 10 minutes. We spread the cowberry and stew for a few more minutes. Then add the circles of orange, cover with a lid and cook for 10 minutes. Delicious dish is ready! Duck leg with raspberry sauce
This recipe for duck leg is easy enough to prepare, and the ready-made dish will necessarily be to your taste both for your family members and guests. Ingredients: two duck leg of medium size, a teaspoon of salt, half teaspoon of dried thyme and ground pepper. To prepare the sauce, we need two tablespoons of duck fat, which we will get duck, garlic clove, a glass of fresh raspberries, two tablespoons of red wine (preferably dry), two teaspoons of crimson or red wine vinegar, two teaspoons of orange peel , Juice from one small orange, sugar (four teaspoons), as well as pepper and salt to taste.
This number of ingredients will be enough for a hearty dinner for a small family. If you expect the arrival of guests, then the products should be taken more. Since this recipe for duck leg needs fresh raspberries, it is well suited for summer time.
Cooking process
With duck leg cut off excess fat. Then, using a sharp knife, we make shallow cuts in the form of a lattice on the legs. Cuts should be carefully so as not to touch the meat. We rub the legs with pepper, salt and thyme, cover with a towel and leave for 1-1,5 hours at room temperature or overnight in the refrigerator.
Directly before baking, the whole leg should be rinsed a little and dried using paper towels. We put the legs in the mold and send it to the heated up to 175 degree oven for 1.5 hours. From time to time, it is desirable to water the whole leg with the juice that is released during baking. We now turn to the preparation of the sauce. With the help of a food processor or a mixer, mix two-thirds of a glass of raspberries, vinegar, wine, sugar, orange juice and zest to a puree state. In a small saucepan pour the duck fat and on medium heat fry in it finely chopped garlic 1-1.5 minutes. Add the raspberry puree and boil the sauce for 3-5 minutes until thick. Then add the remaining berries, cook for another 30-40 seconds, salt, pepper and remove from heat. Baked legs poured with sauce and served on the table with a simple side dish in the form of rice or puree.
