Description

The diameter of the cap can reach 8-10 cm. The coloration is mostly yellow or yellow-brown, in the middle - a darker shade. The pedicle on the average does not exceed a length of 10 cm. The yellowish-white pulp with a pleasant aroma has a slightly acidic taste.

As a rule, from November to March winter mushrooms grow. The description of their appearance is very reminiscent of a poisonous gallery. Therefore, when collecting these mushrooms, it is important that they not be confused with it. A distinctive feature of the gallery is the ring located on the foot. The ripening period for these fungi is different, so they are very rare at the same time, usually only in November.

Recipes

For pickling, you need 5 kg of mushrooms, salt, fresh dill and bay leaf. Disassembled, cleaned of dirt and washed mushrooms are poured with water, adding one spoonful of salt, and bring to a boil. Then, once again washed and boiled in another water for 40 minutes, then placed in a colander.

Put mushrooms in the salting tank, 5 peas of black pepper, 5 dill leaves and 4 tablespoons of salt. Put the oppression from above and put it in a cold place. After 5 days, the mushrooms are spread over sterilized jars and placed in a refrigerator.

Very tasty are the pickled mushrooms. Winter honey agarics are cooked until ready in salted water and placed in a prepared marinade, in which they boil for 15 minutes. For the marinade take 3 cloves, a tablespoon of salt, 10 spoons of 9 percent vinegar, 2 tablespoons of sugar, 5 peas of black pepper, bay leaf for 1 liter of water.

Artificial cultivation

Winter canopy is beautifully grown and artificially manufactured in specially equipped premises such as a cellar or a bunker. They must be maintained a certain microclimate, which includes humidity, lighting, temperature regime. Phytosanitary regulations require that the premises be divided into sections.

The substrate on which winter marmots are grown is sawdust of hardwood trees mixed with vegetable additives (ground with corn cobs, bran and sunflower husks). In Asia and Japan, these mushrooms are grown on an industrial scale.
