The liver takes part in maintaining a delicate balance in the human body and monitors the level of glucose in the blood. If the blood glucose is in excess, the liver detains the excess and converts it into glycogen - animal starch. If the blood glucose level is insufficient, the liver converts glycogen back to glucose.
