Mushrooms pig: poisonous or not? Understand

In our forests, there are a number of fungi, which scientists belong to the category of conditionally edible. A striking example - the same morels and lines, suitable for consumption only after double cooking. Are not an exception and mushroom pigs. Poisonous or not they? The older generation of mushroom pickers believes that after cooking they are quite suitable for food.

Indeed, for a long time biologists and specialists believed that there was nothing deadly dangerous in swine. But only people have long noticed that eating this fungus badly affects some gourmets.

The scientists studied the problem of their toxicity for the first time in the fifties of the last century. Earlier it was believed that mushrooms pig (poisonous or not, they began to find out later) have an adverse effect on health only because they are too quickly damaged.

A little later they found out that they have an increased ability to accumulate toxic substances. But in the 1970s, it was found that with normal cooking, toxins are destroyed, and the fungus becomes quite suitable for eating. After this, the pigs continued to appear in all the reference books as edible gifts of nature.

Unfortunately, everything was smooth only on paper. From all parts of the country, from time to time, there have been reports of poisonings of people who have tasted mushrooms of swine. Poisonous or not, they often led to death or severe toxic liver damage.

Then a whole commission of mycologists from all over the Union took up this problem. It turned out that these fungi are capable of producing and storing muscarin. The same toxin is contained in fly agarics.

Among other things, scientists have found that pigs (photos of which are in the article) accumulate the poison unevenly: in some areas the content of muscarin in them was minimal, while in other places they contained so much toxin that they could easily be compared to grebe.

Recently, researchers have learned that these unpleasant fungi contain not only muscarine, since severe damage to the kidneys and liver can not be explained by its action. What is it is not yet clear. But there is enough information to state with certainty that the pig is a poisonous mushroom!

In addition, further experiments have once again proved his unique ability to accumulate toxins from the environment. So, if there is at least one automobile road within reach, then the flesh of this fungus will contain as much lead, cadmium and arsenic that its consumption as food is uniquely dangerous for life.

Unfortunately, in our country rather late came to such conclusions. So, in the Czech Republic, the pig was considered a poisonous mushroom only in 1984, whereas in West Germany, as such, it had been registered since 1978.

In addition, for a long time there was no proper control over their sale in the markets. So, until the end of the 1980s, not all traders knew that it was forbidden to eat swine at all. Yes, there to say, if to this day they can be found in the markets.
