Chicago pizza is a very satisfying dish that resembles a big pie. As a filling, cheese, pepperoni, vegetables and a special tomato sauce with oregano and basil are used. From our article you will learn how to cook Chicago pizza at home.

Classic Recipe

Professional chefs prepare this original dish in a special deep frying pan, the diameter of which is about 35 cm. If you do not have such a device at your disposal, then you can take the usual form for baking. In this case, the number of ingredients should be reduced by half. So, what products we will need for the test:

  • Wheat flour - three glasses.
  • Corn flour - half a glass.
  • Water - two glasses.
  • Yeast - two teaspoons.
  • Salt and sugar to taste.
  • Vegetable oil - three tablespoons.
  • Butter - 100 grams.
  • Olive oil - four tablespoons.

Ingredients for sauce:

  • Tomatoes are one kilogram.
  • Onion - two heads.
  • Garlic - four cloves.
  • Ground pepper and salt - to taste.
  • Oregano - a teaspoon.
  • Fresh basil - four branches.
  • Butter - 40 grams.
  • Sugar is half a teaspoon.
  • Olive oil - two teaspoons.

For filling:

  • Cheese mozzarella - 500 grams.
  • Sausages - 200 grams.
  • Parmesan cheese - 100 grams.

When all the products are prepared, you can start cooking pizza:

  • Mix the flour, salt, sugar and yeast by hand. Add water and vegetable oil to them. Knead the elastic dough and shape it into a bowl.
  • At the bottom of a deep bowl, pour olive oil, place dough into it and turn over several times. Cover the dishes with food wrap and put in a warm place for one hour.
  • After this you can start preparing the sauce. For this, chop the peeled onion, basil and garlic. Tomatoes dip into boiling water, remove from them peel and cut into a cube.
  • Melt the oil in a saucepan, and then fry onion until golden brown. After a few minutes, add the garlic, oregano and salt. Almost immediately add to them tomatoes and sugar.
  • Increase the heat, bring the mixture to a boil, and then immediately reduce the heat. Simmer sauce on fire for about 20 minutes. At the very end, put olive oil, basil and ground pepper.
  • When the dough is suitable, it should be shifted to a table, rolled into a layer of rectangular shape and greased with a soft butter.
  • Roll the workpiece with rolls and roll it out again. After this operation, fold the sheet with an envelope and send it to the refrigerator for one hour.
  • Rub the cheese on a grater and cut the sausages.
  • Approached dough roll in a large circle and put it in a greased form. Press the reservoir with your hands, forming a bottom and high sides.
  • Lay out the filling - first a thick layer of mozzarella, then sausage, sauce and grated parmesan.

Bake pizza half an hour on the bottom tier of the oven. When the dough is browned, the form can be reached and slightly cooled. Cut the food into portions and spread them on plates.

Chicago pie-pizza

This dish was invented by the chef of one of the pizzerias in Chicago. It happened in the middle of the 20th century, but since then pizza has gained a sea of admirers all over the world. We offer you one more original version of a hearty treat, which you can easily cook at home. For him we will need:

  • 400 grams of yeast dough - you can make your own or prepare it according to the recipe, described in detail above.

For sauce:

  • 250 grams of tomatoes.
  • One tablespoon of chopped garlic.
  • Half a teaspoon of fennel seeds.
  • Half a teaspoon of red pepper.
  • Half a teaspoon of sugar.
  • A teaspoon of dried basil.
  • Half a teaspoon of dried thyme.
  • Half a teaspoon dried oregano.
  • A tablespoon of red dry wine.
  • Half a glass of olive oil.
  • Salt and black ground pepper to taste.

For filling:

  • 150 grams of mozzarella cheese.
  • 200 grams of meat filling (you can use ground beef).
  • Half a thinly chopped bell pepper.
  • 100 grams of chopped champignons.
  • Half a thinly sliced onion.
  • 40 grams of pepperoni or salami.
  • Half a glass of grated Parmesan cheese.

Recipe

  • Remove the tomatoes from the peel and chop them with a blender.
  • Pour the resulting mass into a deep frying pan and add to it the ingredients for the sauce.
  • Bring the products to a boil, and then reduce the heat. Prepare the sauce until it thickens. This product can only be used after it has cooled.
  • Grease the deep frying pan or shape with oil, and then put the dough on it. Stretch the edges so that they lie on the sides of the dishes.
  • Lay out the ground or grated mozzarella. Put meat or sausage on it, and then pepper and mushrooms. Sprinkle on the onion, and spread the pepperoni rings on top.
  • Pour the filling with sauce, and grease the edges of the dough with vegetable oil.
  • Decorate the finished structure with grated parmesan.

Chicago pizza is baked in the oven for about half an hour.
