Then pour 100 g of sugar into the flour. If possible, combine ordinary and cane, 50 g each. Take 80 g of very cold butter and chop it into small cubes into a separate container. Then gradually add flour with sugar and grind. Shortbread is obtained only with cold oil.

In the meantime, sift 150 grams of flour. When the oil is dissolved in water, remove from heat. In the hot mass, pour all the flour at once. If you add a little, there is a possibility of lumps.

Stir the flour and butter thoroughly and put them on the fire again. Now you need to mix all the time with only a wooden or silicone spatula. Try not to take a spoon, as there is a lot of dough on it. Stir until the dough begins to collect in one large, uniform ball.

Cool the mass. Add 4 eggs to the dough, but warm, that is, room temperature. Stir the dough. It should not drip from a spoon, but flow down. If you have achieved the desired consistency, then everything is done right. Now you can bake a cake shu. The recipe is very simple, but it takes a long time.

Spread the cakes on a baking sheet

Since we have two kinds of dough ready, we can make cakes. Take the confectioner's bag (diameter 12 mm). In it, pour the brewed dough and squeeze it onto a baking sheet covered with parchment paper. Let them stand a few minutes and rest.

In the meantime, get out the croqueline, it is already quite frozen and became hard. Place the layer on the table and cut out the circles with an iron mold.

It is desirable that they are the size of the cakes that are already lying in the pan. It is possible and less. You have got small, beautiful, identical circles or coins. They need to spread from above on the custard cakes.

Baking

We turn on the oven 180 degrees and put a pan with cakes. They are baked for about 15 minutes. The bottom will turn rosy, and the tip is cracked. If you get the cakes ahead of time, then the balls fall off and you get a flat and ugly dessert.
