Chicken, peanuts and sweet potatoes are one of such magical flavor combinations that can please many lovers of unusual dishes. The chicken stew recipe with vegetables and peanut butter is part of the African cuisine and is used throughout West Africa. The article gives instructions for preparing this exotic dish.

As follows from the name of the dish, its base is a chicken stew. The recipe for classical African custom involves the preparation of a whole carcass, and then its subsequent grinding. However, this may seem laborious, so it is desirable to still use the shredded parts: wings, legs and especially the hips. In addition, you can choose the most suitable option for you - to use one meat in the dish, separating the skin and bones from it, or to cook everything entirely. The second option is more desirable, since this will add an extra flavor to the dish.

Sweet potatoes are mandatory in the African version, but if you do not like it or can not find it on sale, use plain potatoes or turnips.

Meat should be quite sharp, so seasonings are of great importance. At the end of cooking, add 1 teaspoon of cayenne pepper. Ideally, it is better to use chili, but you must correctly calculate its amount. Use chicken thighs, thighs or wings for this recipe. They have more flavor and will be more juicy than the breast.

Ingredients:

- 1-1.5 kg of chicken thighs, legs and / or wings;

- 1 onion, white or yellow;

- 3 tablespoons vegetable oil;

- a piece of ginger, pre-cleaned and cut;

6-8 cloves of garlic, finely chopped;

- 1-1.5 kg of potatoes sweet, peeled and pre-cut into pieces;

- 500 grams of crushed tomatoes canned;

- 500 ml of chicken broth;

- 1 cup of peanut butter ;

- 1 cup peanut roasted;

- 1 tablespoon of ground coriander;

- 1 teaspoon of cayenne pepper (or to taste);

- black pepper and salt;

- 1/4 or 1/2 cup coriander ground.

Heat in a large-sized saucepan with vegetable oil on medium heat. Add chicken pieces and fry until lightly brown. Set them aside.

Fry in onion for 3-4 minutes, stirring constantly and removing any burnt parts from the bottom of the pan. Put garlic and ginger and fry for 1-2 minutes, then add the potatoes sweet and mix carefully to combine all the ingredients.

Add chicken, chicken broth, chopped tomatoes, peanut butter, peanuts, cayenne pepper and coriander to the mixture and mix all the products very well. Bring the dish to a boil, then add salt to taste. Cover the pan and simmer for half an hour on low heat (check the degree of readiness in an hour), or until the meat of the chicken is easy to descend from the bones, and the sweet potatoes will not get soft.

Remove the chicken pieces from the pan and put them in a bowl to cool - until enough light to touch them. Remove and discard the skin, and then remove the bones and chop the meat (if desired). Put everything back in the pan. Adjust the amount of seasonings and salt, and add the hot pepper to taste. Sprinkle with cilantro and serve on a table with boiled rice.
